A delightful ‘Gimbap Omelette’ made by ingeniously using leftover gimbap. This dish is perfect for a satisfying meal or a fun snack for kids.
Ingredients- 1 roll of Gimbap (use leftovers)
- 3 eggs
- A pinch of salt
- Brown rice oil (or cooking oil)
Cooking Instructions
Step 1
First, crack 3 fresh eggs into a bowl. Add just a small pinch of salt. Gently whisk the eggs, avoiding excessive froth, to prepare the egg mixture. It’s best to adjust the saltiness considering the existing seasoning in the gimbap.
Step 2
Next, prepare your leftover gimbap. Finely chop the gimbap into bite-sized pieces. Cutting them uniformly to about 0.5cm to 1cm will help them mix well with the egg mixture and cook evenly. You can remove the crusty ends if you prefer, or chop them along with the rest.
Step 3
Add the finely chopped gimbap to the prepared egg mixture and stir gently to combine. Ensure all the gimbap pieces are coated in the egg mixture for a nicely formed omelette. Mix carefully so as not to break the gimbap apart too much.
Step 4
Now, heat a non-stick pan over medium-low heat. Once the pan is warm, add just a little bit of brown rice oil (or cooking oil) – you don’t want to deep-fry it. Carefully pour the gimbap and egg mixture into the pan. Gently swirl the pan to distribute the mixture evenly and prevent the gimbap from clumping.
Step 5
After pouring in the mixture, it’s crucial to reduce the heat to very low. High heat will burn the outside before the inside is cooked. Cover the pan with a lid. Let it cook gently over low heat for about 5-7 minutes, or until the egg is completely set and firm. If flipping is difficult, you can fold it in half while cooking, or add a bit more egg mixture to the top once it’s mostly set. Cook until golden brown and serve.
