Whipping Up Special LA Mini Kimbap with Leftover Side Dishes!
Introducing the LA Mini Kimbap recipe, perfect for a late-night snack or a delicious lunch! It’s an easy way to use up those side dishes hiding in your fridge, and the fun of assembling your own makes it extra special!
Kimbap Ingredients- 1/2 portion Braised Fish Cake
- 1/2 portion Stir-fried Korean Hot Peppers
- 1/2 portion Seasoned Spinach
- 1/2 portion Seasoned Burdock Root for Kimbap
- 1 Egg
- 50g Tuna Mayonnaise Mixture
- 2 packs Seasoned Seaweed (Gim)
- 1/2 portion Seasoned Scallion Leaves
- 1 Instant Rice Pack
Rice Seasoning- A little Sesame Oil
- A little Salt
- A little Sesame Oil
- A little Salt
Cooking Instructions
Step 1
First, we’ll make scrambled eggs to use as a filling for the kimbap. Crack one egg into a bowl, heat a frying pan with a little cooking oil, and pour in the egg. Use chopsticks to scramble it into fluffy pieces as it cooks. Make sure to break it up well so it doesn’t form large clumps.
Step 2
Gather all the side dishes from your refrigerator that you plan to use as kimbap fillings and arrange them together. Using a variety of side dishes like braised fish cake, stir-fried Korean hot peppers, seasoned spinach, seasoned burdock root, and seasoned scallion leaves will create a richer flavor.
Step 3
Heat one instant rice pack in the microwave until warm. Add a little sesame oil and a pinch of salt to the warm rice and mix well to season. It’s important to mix the seasoning evenly while the rice is still hot so the flavors can penetrate.
Step 4
Now, let’s prepare to roll the kimbap. I have two packs of seasoned seaweed ready. Spread the seasoned rice and your chosen fillings evenly onto the seasoned seaweed sheets. Then, roll them up tightly to prevent the seaweed from breaking. Since these are mini kimbap, rolling them small makes them perfect for a single bite!
Step 5
Arrange the finished mini kimbap attractively on a plate. They make a wonderful snack when paired with beer or your favorite beverage.
Step 6
This is how you place the rice and your prepared fillings onto the seasoned seaweed. Feel free to add plenty of different side dishes according to your preference for an even tastier experience.
Step 7
Roll the seaweed tightly to form the mini kimbap shape. Even though they are small, make sure to fill them generously and roll them carefully.

These also make excellent spinach kimbap for adults. The soft seasoned spinach blends beautifully with the rice.

Kimbap with stir-fried Korean hot peppers is another delightful option. The mild spiciness of the peppers cuts through any richness.
