LA Galbi and Potato Stew: The Ultimate Savory Side Dish
A Deliciously Salty LA Galbi and Potato Stew – Perfect with Rice!
I had thawed some LA Galbi to grill, but changed my mind and decided to make it into a side dish by braising it with potatoes. Even while dieting, this savory and slightly sweet stew makes rice taste incredibly delicious! It’s a perfect side dish that will have you wanting to finish your rice in no time.
Main Ingredients- 400g LA Galbi (short ribs)
- 350g Potatoes
- 1/2 Onion
- 1 stalk Green Onion
- 200ml Water
Seasoning- 2 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce (for soup or stir-fry)
- 3 Tbsp Dark Soy Sauce (or regular soy sauce)
- 3 Tbsp Plum Extract (Maesil Cheong)
- 2 Tbsp Corn Syrup (Oligodang)
- 1 Tbsp Cooking Wine (Mirin)
- Pinch of Black Pepper
- 1 Tbsp Sesame Oil
- 1 tsp Sesame Seeds
- A little ‘TokTok Vegetables’ Ginger (minced ginger)
- A little ‘TokTok Vegetables’ Cheongyang Pepper (chopped)
- 2 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce (for soup or stir-fry)
- 3 Tbsp Dark Soy Sauce (or regular soy sauce)
- 3 Tbsp Plum Extract (Maesil Cheong)
- 2 Tbsp Corn Syrup (Oligodang)
- 1 Tbsp Cooking Wine (Mirin)
- Pinch of Black Pepper
- 1 Tbsp Sesame Oil
- 1 tsp Sesame Seeds
- A little ‘TokTok Vegetables’ Ginger (minced ginger)
- A little ‘TokTok Vegetables’ Cheongyang Pepper (chopped)
Cooking Instructions
Step 1
Thaw the frozen LA Galbi. Rinse it once under cold water. Pat dry thoroughly with paper towels to remove excess moisture and blood. Cut into bite-sized pieces. Peel the potatoes, cut them in half, then slice into half-moon shapes. Rinse them in water to remove starch, then drain in a colander.
Step 2
Slice the green onion diagonally and chop the onion into similar-sized pieces.
Step 3
In a deep wok or pot, place the prepared LA Galbi and potatoes first.
Step 4
Arrange the sliced onion and green onion nicely on top of the Galbi and potatoes.
Step 5
In a bowl, combine the minced garlic, soy sauce, dark soy sauce, plum extract, corn syrup, and cooking wine. Mix well to create the seasoning sauce.
Step 6
Pour the prepared seasoning sauce evenly over the ingredients. Add 200ml of water. Cover with a lid and bring to a boil over high heat.
Step 7
Simmer until the ingredients are cooked and the sauce has reduced to a desirable consistency. Once the sauce thickens, add a pinch of black pepper, then drizzle in the sesame oil and sprinkle with sesame seeds for a nutty aroma.
Step 8
To cut through richness and add a hint of spiciness, sprinkle with ‘TokTok Vegetables’ Ginger and chopped ‘TokTok Vegetables’ Cheongyang Pepper. (Optional)
Step 9
Transfer the finished LA Galbi and Potato Stew to a serving dish. Enjoy this wonderful homemade side dish!
