LA Galbi and Mushroom Hot Pot: A Festive Transformation

If you have leftover LA Galbi from the Chuseok holidays, transform it into a magnificent hot pot by adding plenty of mushrooms and fresh vegetables! It’s perfect for the whole family to gather around and enjoy, and it makes a wonderful addition to your festive holiday table. At our home, we always make LA Galbi and Mushroom Hot Pot after the holidays to create a special meal.

Main Ingredients

  • LA Marinated Galbi 500g
  • Tofu 200g
  • Button Mushrooms 40g
  • Shiitake Mushrooms 20g
  • King Oyster Mushrooms 90g
  • Enoki Mushrooms 60g
  • Bok Choy 160g
  • Bean Sprouts 150g
  • Onion 50g
  • Carrot 30g
  • Scallion (Green Onion) 50g
  • Red Chili Pepper 1 pc

Broth and Seasoning

  • Minced Garlic 1 Tbsp
  • Oyster Sauce 1 Tbsp
  • Cooking Wine (Mirin/Sake) 2 Tbsp
  • Tsuyu (Dashi Soy Sauce) 3 Tbsp
  • Black Pepper to taste (a pinch)
  • Water 500ml

Cooking Instructions

Here are all the ingredients prepared for a delicious LA Galbi and Mushroom Hot Pot. Just looking at them makes my mouth water!

First, take the frozen LA Marinated Galbi out of the freezer and let it thaw completely. Place the thawed galbi and any remaining marinade sauce into a pot. Carefully separate the ribs into individual pieces by cutting along the bones. (For detailed tips on how to marinate LA Galbi, please refer to my other recipe @7010464!)

Pour 500ml of water into the pot, enough to cover the galbi, and bring it to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 20 minutes, allowing the galbi to become tender. This process helps to infuse the broth with the rich flavor of the galbi.

Once the galbi is tender, carefully remove it from the pot. Now, it’s time to season this flavorful broth.

Add 1 tablespoon of minced garlic to the broth for aromatic depth. Then, stir in 1 tablespoon of oyster sauce for a touch of umami. Next, add 3 tablespoons of Tsuyu (dashi soy sauce) for a deep, savory flavor, and 2 tablespoons of cooking wine to eliminate any unwanted odors and enhance the overall taste.

Finally, add a pinch of black pepper for a slight peppery kick and aroma. This completes the seasoning, making the broth even richer.

Prepare the mushrooms: Cut the king oyster mushrooms into 3 pieces each. Peel the button mushrooms and cut them into 3-4 wedges. Thinly slice the shiitake mushrooms. Trim the base of the enoki mushrooms and separate them into strands.

Tip: For button mushrooms, peeling from the bottom upwards makes it much easier to remove the skin cleanly.

Prepare the vegetables: Slice the carrot thinly, about 0.2cm thick, and optionally use a small cookie cutter for decorative shapes. Cut the red chili pepper and scallion diagonally into bite-sized pieces. Thinly slice the onion into 0.3cm thick strips.

Wash the bok choy and bean sprouts thoroughly under running water and drain them. They are now ready to be added to the hot pot.

Cut the tofu into approximately 1cm thick slices. Cutting them into larger pieces will help them hold their shape in the hot pot without falling apart.

If you have leftover tofu, you can store it submerged in water in the refrigerator for about a week. Remember to change the water daily to keep it fresh!

Now it’s time to artfully arrange all the ingredients. Place the prepared vegetables, mushrooms, and tofu around the edge of the pot filled with the seasoned broth. In the center, arrange the pre-cooked LA Galbi attractively.

Turn the heat to medium and cover the pot. Let it simmer and bubble until all the ingredients meld together. The broth, infused with the flavors of the galbi, vegetables, and mushrooms, is incredibly refreshing and delicious! The variety of ingredients also adds to the enjoyment.
