Main Ingredients- 3 fresh mackerel
- 1/3 Korean radish (approx. 300-400g), for sweetness and refreshing flavor
- 700ml rice water (or plain water)
- 1 onion, for added sweetness and depth
- 2 stalks green onion, for aroma
- 5 Korean green chili peppers (Cheongyang peppers), for a hint of spice
- 2 red chili peppers, for color
Spicy and Sweet Sauce- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp guk-ganjang (Korean soup soy sauce) or regular soy sauce
- 2 Tbsp soju (or cooking wine/mirin), to remove fishiness
- 1 Tbsp minced garlic
- 1/2 Tbsp sugar (or oligosaccharide)
- A pinch of black pepper
- A pinch of ginger powder (or 1/2 tsp minced ginger)
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 3 Tbsp guk-ganjang (Korean soup soy sauce) or regular soy sauce
- 2 Tbsp soju (or cooking wine/mirin), to remove fishiness
- 1 Tbsp minced garlic
- 1/2 Tbsp sugar (or oligosaccharide)
- A pinch of black pepper
- A pinch of ginger powder (or 1/2 tsp minced ginger)
Cooking Instructions
Step 1
First, arrange the generously sliced radish at the bottom of your pot, ensuring they don’t overlap. This helps the radish absorb the flavorful sauce as it cooks. Next, artfully arrange the roughly chopped onion on top of the radish.

Now, let’s prepare the delicious sauce! In a bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp minced garlic, and 1/2 Tbsp sugar. Mix them well. You can substitute sugar with oligosaccharide for a different kind of sweetness.

Next, add 2 Tbsp soju, 3 Tbsp soy sauce, and a pinch of ginger powder to the sauce mixture. Stir everything together. Finally, sprinkle in a pinch of black pepper. Spoon this flavorful sauce evenly over the radish and onions in the pot.

Place the cleaned mackerel pieces neatly on top of the sauced radish and onions. While the soju helps with the fishy smell, you can add 1 Tbsp of cooking wine or mirin to the rice water if you prefer an even cleaner taste.

Carefully pour the 700ml of rice water around the edges of the pot, ensuring it reaches the ingredients without washing off the sauce. If you don’t have rice water, plain water works just fine. Aim for the liquid to come up to about the level of the ingredients.

Place the pot over high heat. Once it starts to boil, reduce the heat to medium-low, cover the pot with a lid, and let it simmer for about 15 minutes. It’s important to cook the radish until it becomes translucent and tender.
Step 7
After 15 minutes, lift the lid and spoon some of the simmering liquid over the mackerel to help it absorb the flavors. Taste the sauce and adjust the seasoning if needed – add a little more soy sauce if it’s too bland, or a splash more rice water if it’s too salty.

Cover the pot again and continue to simmer over medium-low heat for another 10 minutes. The sauce should thicken slightly, and the mackerel should be cooked through and tender. Spooning the sauce over the fish occasionally will enhance the flavor.

Finally, add the long-cut green onions and the diagonally sliced red and green chili peppers generously. I personally love green onions, so I tend to add plenty! Simmer for another 2-3 minutes until the aroma of the green onions infuses the dish. Your Godeungeo Mu Jorim is ready!
