Essential Ingredients- 1.5 cups unsweetened soy milk (standard paper cup measurement)
- 1 pack konjac noodles (approx. 200g)
- 1/4 cucumber
- 1/4 tomato
- 1 Tbsp vinegar
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the toppings. Wash the cucumber thoroughly and julienne it into thin strips. Wash the tomato, then halve it if using cherry tomatoes, or cut it into bite-sized pieces if using a regular tomato (about 1/4 of the tomato).
Step 2
Rinse the konjac noodles under running water to remove any unique odor. Bring a pot of water to a boil and add 1 tablespoon of vinegar. Adding vinegar helps improve the texture of the konjac noodles, making them chewier. Once the water is boiling, add the konjac noodles and blanch them for about 1-2 minutes. Immediately rinse them under cold water and drain thoroughly. This step prevents the noodles from becoming mushy and ensures they are served refreshingly cold.
Step 3
Arrange the drained konjac noodles attractively in a wide bowl or noodle bowl. Pour the chilled, unsweetened soy milk over the noodles, ensuring they are well-covered.
