Kiwi Syrup

  • 4 kiwis
  • 300g sugar

Kiwi Sherbet

  • 6 kiwis
  • 50g sugar
  • 10g lemon juice
  • 20g water

Cooking Instructions

Start by preparing the kiwis for the syrup. Peel 4 kiwis and cut them into bite-sized pieces. If using a blender, you can cut them into larger chunks.

In a thoroughly sterilized bowl, combine the prepared kiwi pieces with 300g of sugar. Mix well and let it sit at room temperature for about 30 minutes. This allows the kiwi to release its juices and the sugar to begin dissolving.

Prepare a clean, sterilized glass jar. Transfer the kiwi and sugar mixture, along with any released juice, into the jar. Cover the surface with a layer of sugar and seal the jar tightly with plastic wrap to prevent air exposure. Let it mature in the refrigerator for about a week to create a delicious kiwi syrup.

Now, let’s make the kiwi sherbet. Peel and roughly chop 6 kiwis for the sherbet. Place the chopped kiwis, 50g of sugar, 10g of fresh lemon juice, and 20g of cold water into a blender or food processor. Blend until smooth.

Pour the blended kiwi mixture into a freezer-safe container. To achieve a smooth sherbet texture, freeze it and then take it out every 2 hours to scrape it with a fork, breaking up any ice crystals. Repeat this process 2-3 times until you reach a sherbet-like consistency.

Finally, assemble your delightful Kiwi Sherbet Ade! In a clear glass, add 2-3 tablespoons of the prepared kiwi syrup. Fill the glass with ice.
