I’ve reinvented tteokbokki, a dish I often make, in my own unique style! Introducing ‘Fusion Kimchi Tteokbokki’. ♡~ This recipe is a reinterpretation of Kang’s Kitchen 2’s hot menu item, the Quattro Fried Tteokbokki! My secret ingredients are ‘Kimchi’ and ‘Hobak Pajeon’ (Zucchini Pancake). Let me share my secrets with you right now!
Main Ingredients- Tteokbokki rice cakes 1 bowl (approx. 200g)
- Fish cakes 5 sheets
- Onion 1/2
- Well-fermented Kimchi 1/2 bowl (approx. 100g)
- Zucchini 1/2
- Carrot 1/3
- Green onion 1 stalk
- Frozen dumplings 4 pcs
- Chicken breast steak 1 pack (optional)
Fusion Seasoning Sauce- Gochujang (Korean chili paste) 1 Tbsp
- Ketchup 2 Tbsp
- Oyster sauce 1 Tbsp
- Sugar 0.5 Tbsp
- Oligosaccharide 1 Tbsp
- Gochugaru (Korean chili powder) 0.5 Tbsp
- Water 100ml
- Gochujang (Korean chili paste) 1 Tbsp
- Ketchup 2 Tbsp
- Oyster sauce 1 Tbsp
- Sugar 0.5 Tbsp
- Oligosaccharide 1 Tbsp
- Gochugaru (Korean chili powder) 0.5 Tbsp
- Water 100ml
Cooking Instructions
Step 1
First, prepare the basic ingredients for the tteokbokki. You’ll need tteokbokki rice cakes, fish cakes, onion, and the star of this recipe, kimchi. Additional toppings like chicken breast steak or dumplings can be prepared according to your preference.
Step 2
Let’s make the seasoning sauce for a delicious tteokbokki! (Using a standard rice spoon) Add 1 Tbsp gochujang, 2 Tbsp ketchup, 1 Tbsp oyster sauce, 0.5 Tbsp sugar, 1 Tbsp oligosaccharide, and 0.5 Tbsp gochugaru. Then, pour in 100ml of water and mix well. Stir everything together until fully combined!
Step 3
Now, it’s time to prepare the vegetables. Slice 1 green onion diagonally. This will add a fresh flavor and aroma.

Chop half an onion into large pieces. As it cooks, it will release its sweetness, making the tteokbokki sauce even more delicious.

Cut the fish cakes into bite-sized pieces. These are important for achieving that chewy texture tteokbokki is known for.

Uncover a hidden gem from your fridge! If you have a chicken breast steak, cut it into manageable pieces. (This is an optional ingredient, but it adds a satisfying chewiness!)

To add charm to your fusion tteokbokki, prepare the ingredients for the zucchini pancake. Finely julienne the zucchini and carrot. Shredded onion can also be added.

Now, let’s stir-fry my secret ingredient, ‘kimchi’! Heat a little oil in a pan, sauté the chopped green onions until fragrant, then add the chopped kimchi and stir-fry them together. The crisp texture of the slightly cooked kimchi is truly delightful. This process also removes any raw smell from the kimchi and enhances its umami flavor.
Step 9
Once the kimchi is somewhat sautéed, add the shredded onion and cook together. When the onion starts to turn translucent, add the tteokbokki rice cakes, fish cakes, dumplings, all the prepared toppings, and the seasoning sauce you made earlier. Mix everything well.

While the tteokbokki is bubbling and cooking to perfection, let’s make the accompanying zucchini pancake. You can whip this up quickly while the tteokbokki simmers.

Make the zucchini pancake batter. In a bowl, combine the shredded zucchini and carrot with 3 Tbsp pancake mix (rice spoon measurement), 2 Tbsp breadcrumbs (rice spoon measurement), 1 egg, 1 tsp sugar, and about half a paper cup of water. Mix well. Adding breadcrumbs will make it extra crispy.
Step 12
Heat a generous amount of oil in a pan. Ladle spoonfuls of the batter into the pan and cook until golden brown on both sides. Cooking until golden will bring out a nutty flavor.
Step 13
Transfer the finished kimchi tteokbokki to a serving dish, and top it with the deliciously golden-brown zucchini pancake. This creates a special ‘Fusion Kimchi Tteokbokki’ that’s just as impressive as the Quattro Tteokbokki!
