  • 1 block (250g) Firm Tofu
  • 1 cup Kimchi (well-fermented, with a little juice)
  • 1/2 Onion

Cut the tofu into bite-sized pieces and drain excess water thoroughly. If you’re short on time, pat it dry with paper towels to remove as much moisture as possible. Place the prepared tofu under a press or a heavy object for about 10 minutes to firm it up. This helps maintain its shape and prevents it from breaking apart.

Finely chop the well-fermented kimchi into small pieces, about 0.5cm, making it easy for everyone to eat. If the kimchi is too sour, you can add a little sugar to balance the flavor.

Dice the onion into small cubes, similar in size to the chopped kimchi (about 0.5cm). In a bowl, combine the pressed tofu, chopped kimchi, and diced onion. Add 2 Tbsp of gochugaru and 2 Tbsp of potato starch. Mix everything gently with your hands until well combined and coated with the seasoning. The starch will help bind the ingredients and give them a nice gloss when cooked.
