A perfect solo meal that only requires kimchi! This simple and delicious pot rice is ideal for busy days or when you’re dining alone. The harmonious blend of freshly cooked rice and well-fermented kimchi will tantalize your taste buds.
Key Ingredients- 65g finely chopped kimchi (the sourer, the better!)
- 1 bowl of warm rice (approx. 150g)
- 2 Tbsp sesame oil

Step 1
Let’s start your delicious Kimchi Pot Rice journey! First, prepare the kimchi. Using kitchen scissors or a knife, chop the kimchi into very small pieces, making it easy to eat and mix with the rice. Using slightly sour kimchi will enhance the flavor even more!
Step 2
Spread the finely chopped kimchi evenly at the bottom of the pot. Drizzle 2 tablespoons of sesame oil over the kimchi to add a nutty aroma and rich flavor. The sesame oil will seep into the kimchi and rice, elevating the overall taste.

Now it’s time for the rice. Gently place 1 bowl of warm rice over the sesame oil-coated kimchi. Lightly press the rice to spread it evenly. Cover the pot with a lid and heat over medium-low heat. Once you start smelling a subtle, appetizing toasting aroma from the bottom of the pot as the rice cooks, turn off the heat and let it steam for about 20 more seconds. Be careful not to overcook, as it can burn!
