Super Simple Cheese Rice Recipe Using Kimchi Dumplings from Your Freezer, Perfect for a Solo Meal!
Try making a delicious cheese rice dish using the kimchi dumplings lingering in your freezer. It’s simple yet satisfying, making it an ideal meal for one. You can even enjoy a delightful crispy bottom layer!
Main Ingredients- 3 Kimchi Mandu (Korean dumplings)
- 0.5 bowl of cooked rice
- 1 handful of Mozzarella cheese (generous amount)
Cooking Instructions
Step 1
Start by slightly defrosting the 3 kimchi mandu. Place them in the microwave for about 1 minute. Once slightly softened, carefully separate the dumpling skin from the filling. Discard the skins, as we will only be using the savory filling.
Step 2
In a ttukbaegi (Korean earthenware pot) or a small saucepan, add the separated kimchi mandu filling. Drizzle 1 tablespoon of sesame oil over it. Gently mash the filling with a spoon or spatula while mixing it with the sesame oil, as if stir-frying it lightly.
Step 3
Now, add about half a bowl of cooked rice to the pot. You can use freshly cooked warm rice or leftover cold rice.
Step 4
Next, add 2/3 tablespoon of gochujang. Mix everything thoroughly, ensuring the rice and mandu filling are well combined with the gochujang. You can adjust the amount of gochujang according to your spice preference.
Step 5
Press the seasoned rice mixture firmly into the bottom of the ttukbaegi, creating an even layer. This step is key to achieving a delicious crispy rice crust, or ‘nurungji’, at the bottom!
Step 6
Sprinkle 1 tablespoon of drained canned corn kernels evenly over the rice. The corn adds a delightful pop and texture to the dish. However, be mindful not to add too much corn, as it can make the overall rice taste overly sweet and detract from the savory flavors. Stick to just 1 tablespoon to ensure the best taste. Trust us on this, you won’t regret it!
Step 7
Generously sprinkle your desired amount of mozzarella cheese over the corn. I opted for a very generous amount because who doesn’t love melted, stretchy cheese? It will look incredibly appetizing.
Step 8
Cover the ttukbaegi with a lid and cook over low heat until the cheese is completely melted and bubbly, which should take about 3-5 minutes. While the cheese melts, a wonderful crispy rice layer will form at the bottom. To serve, gently mix the melted cheese and rice together. Enjoy the delightful gooeyness and the crispy nurungji!
