Every morning, I prepare a healthy meal for my children! Since my child wanted omurice, I chopped vegetables the day before and rushed to make it early in the morning to send them off to school. ^^ My children really love the omurice I make for them. Let’s make some omurice filled with love together! ^^

Omurice & Fried Rice Ingredients

  • 6 eggs
  • 3 bowls of cooked rice
  • 1/2 onion
  • 1/4 carrot
  • 1 green onion
  • 1 handful of mushrooms
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • A pinch of black pepper

Special Roux (Sauce) Ingredients

  • 2 Tbsp all-purpose flour
  • 2 Tbsp cooking oil
  • 2 Tbsp soy sauce
  • 2 Tbsp ketchup
  • 2 Tbsp sugar
  • 1.5 cups water (approx. 300ml)

Cooking Instructions

Step 1

Dice the vegetables into small, attractive cubes that are perfect for children to eat. This makes it easier for them to enjoy their vegetables.

First, let’s make the delicious roux (sauce). Heat 2 Tbsp of cooking oil in a pan over low heat. Add 2 Tbsp of flour and whisk until there are no lumps.

This step involves browning the flour to create color. Cook over low heat, stirring constantly, for about 7-10 minutes. You’ll see the flour gradually change from white to yellow, and finally to a appetizing brown color.

Once the roux reaches your desired color, slowly pour in 1.5 cups (approx. 300ml) of water while whisking to ensure a smooth consistency. Then, add 2 Tbsp each of sugar, ketchup, and soy sauce. Simmer over medium-low heat, stirring occasionally, until the sauce thickens to create your special, delicious sauce.

Now it’s time to make the fried rice. Heat a little cooking oil in a lightly oiled pan. Add the chopped green onions and sauté them to create fragrant green onion oil. Cooking over low heat prevents burning and extracts the best flavor.

Once the green onion oil is fragrant, add all the diced vegetables and stir-fry them quickly over high heat. When the vegetables are partially cooked, add 1 Tbsp of soy sauce to season. Be careful not to overcook the vegetables; you want them to retain a slight crunch.

When the vegetables are about 90% cooked, add 3 bowls of warm cooked rice. Sprinkle with 1 Tbsp of oyster sauce and a pinch of black pepper. Gently mix everything together with a spatula, being careful not to mash the rice grains, until well combined. Your delicious vegetable fried rice is now ready.

Let’s make the star of the omurice: the egg! Two eggs make one serving. Whisk the eggs gently in a bowl until well combined. Lightly oil a preheated non-stick pan and pour in the beaten egg. As the edges of the egg begin to set, reduce the heat to low and use chopsticks to gently stir and scramble the egg, creating a fluffy and tender egg blanket.

This is the final step! Nicely plate the vegetable fried rice. Gently drape the fluffy egg blanket over the fried rice, like tucking it in. Finally, generously spoon the special roux (sauce) over the fried rice and egg. Your visually appealing and incredibly tasty vegetable fried rice omurice is complete. Enjoy your meal!
