Ingredients

  • 150g Rigatoni pasta
  • 1/4 yellow bell pepper
  • 1/4 red bell pepper
  • 1/4 onion
  • 2 Tbsp black olives
  • 3 strips bacon
  • 100g mozzarella cheese (shredded)
  • 1 cup (approx. 200ml) tomato sauce
  • 1 tsp salt (for boiling pasta)

Cooking Instructions

First, prepare the vegetables for the skewers. Remove the seeds from the yellow and red bell peppers and dice them into small cubes of about 1cm. Dice the onion into similar-sized cubes. Cutting the vegetables evenly will make the skewers look beautiful and ensure they cook at a consistent rate.

Cut the bacon into bite-sized pieces. Aim for a size that will fit nicely on the skewer along with the rigatoni.

Bring a large pot of water to a boil and add 1 tsp of salt. Once the water is boiling rapidly, add the rigatoni pasta and cook for about 9 minutes, which is about 1 minute less than the package instructions. Cooking it slightly al dente will prevent it from becoming too mushy after baking. Drain the cooked pasta in a colander.

Prepare your skewers. Thread the drained rigatoni pasta onto the skewers, one by one. Inserting them through the hollow center of the rigatoni will help secure them. Aim for 2-3 rigatoni pieces per skewer.

Spoon about 1 tablespoon of tomato sauce onto each rigatoni and spread it evenly. You can use a small spoon or spatula for this. Evenly coating the pasta with sauce will help all the flavors meld together beautifully.

Now it’s time to layer on the pizza toppings! Arrange the diced onion, bacon, shredded mozzarella cheese, bell peppers, and black olives on top of the tomato sauce-covered rigatoni. While you can arrange them in any order you like, a common method is to layer the vegetables first, followed by the bacon, and then generously top with cheese for a visually appealing and delicious result. Black olives add a nice touch of color and flavor.

Place the assembled pizza skewers into a preheated oven at 180°C (350°F) and bake for about 5 minutes, or until the cheese is melted and bubbly and the ingredients are heated through. Baking time may vary depending on your oven. If you don’t have an oven, you can use an air fryer or even a frying pan with a lid over low heat until the cheese melts. Serve immediately while warm for the happiest little eaters!
