  • 1 cup macaroni
  • 3 Tbsp sweet corn (canned corn)
  • 300ml water
  • 3 Tbsp brown sugar
  • 1/2 apple
  • 1 cucumber

Dressing Ingredients

  • 5-6 Tbsp mayonnaise
  • 1 Tbsp sugar
  • 1 Tbsp salt
  • 1 Tbsp vinegar or lemon juice
  • Pinch of black pepper

Cooking Instructions

First, add 1 cup of macaroni to boiling water and boil over high heat for about 10 minutes. Adding 1/2 Tbsp of salt to the water is said to enhance the macaroni’s flavor. (If you need a bit more cooking time, you can reduce the heat to medium and boil for about 15 minutes.)

Next, let’s prepare the sweet syrup. In a pot, combine 300ml of water and 3 Tbsp of brown sugar, stirring until the sugar is completely dissolved.

Wash the apple, remove the core, and dice it into bite-sized pieces. Immediately after slicing, submerge the apple pieces in the prepared sugar water. This step helps prevent browning and adds a subtle sweetness.

Prepare the canned sweet corn available at the supermarket. Add about 3 Tbsp of corn to your salad bowl. To prevent the salad from becoming watery or bland, drain the liquid from the can before adding the corn, or simply use the corn kernels.

Wash the cucumber, trim the ends, and dice it finely to match the other salad ingredients. After dicing, gently pat the cucumber pieces with a paper towel to remove excess moisture; this will result in a cleaner salad. (Using leftover cucumber from making kimbap is also a great idea!)

Check if the macaroni is cooked! Once cooked, rinse the macaroni under cold water to cool it down. Drain thoroughly using a colander, then add it to the salad bowl.

Drain the apple pieces that were soaking in the sugar water, lightly pat them dry, and add them to the salad bowl.

Oops, I decided to add more mayonnaise for an even creamier texture! Since I increased the mayonnaise, I’ve added an additional 1/2 Tbsp of sugar and 1/2 Tbsp of salt to rebalance the flavors. Now, a truly delicious sweet and savory macaroni salad is complete! It’s perfect as a snack for kids or for gatherings.
