For the prettiest results, ensure all your fillings are cooled slightly before assembling. You can omit the ham and substitute it with crab sticks or bacon for a different flavor profile.

  • 6 large eggs
  • 1/4 carrot
  • 5-6 perilla leaves
  • 1/2 stick ham
  • 1 sheet gimbap seaweed (nori)
  • Pinch of salt
  • Pinch of black pepper
  • Vegetable oil

Cooking Instructions

In a bowl, crack the 6 eggs. Add a pinch of salt and a pinch of black pepper, then whisk thoroughly until well combined. Since the egg layer is the star here, make sure you have enough!

Wash the carrot, peel it, and julienne it into thin strips about 0.3 cm thick. Wash the perilla leaves, pat them dry, then roll them up tightly and julienne them finely. Cut the ham into long strips suitable for gimbap filling.

Lightly grease a non-stick pan with a little vegetable oil, then use a paper towel to wipe it, creating a thin oil coating. Keep the heat at medium-low. Pour about one ladleful of the whisked egg mixture into the pan and swirl the pan gently to create a thin, round omelet layer.

When the edges of the egg layer start to lift slightly, carefully flip it over and cook for about 10 more seconds, then immediately remove it from the pan. Place the cooked egg omelet on a cooling rack or plate. It’s crucial to let the omelets cool down completely; otherwise, they might break when you roll the gimbap.

While the egg layers are cooling, heat a little vegetable oil in a pan over medium-low heat. Add the julienned carrots and stir-fry until they become slightly translucent. Then, add the sliced ham and stir-fry until lightly browned. This step adds a nice depth of flavor.
