Main Ingredients
- Well-fermented Kimchi: 1.5 paper cups (approx. 200g)
- Cooked Rice: 1 bowl (warm rice)
- Mozzarella Cheese: 1 paper cup (approx. 100g)
Cooking Instructions
Step 1
First, finely chop the kimchi into bite-sized pieces. If your kimchi is very juicy, you can gently squeeze out some of the excess liquid. Chopping it finely is key to prevent clumps when stir-frying.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the finely chopped green onions and stir-fry until fragrant. This step creates ‘green onion oil,’ which significantly deepens the flavor of the fried rice.
Step 3
Once the green onion oil is fragrant, add the chopped kimchi to the pan. Increase the heat to medium-high and stir-fry for about 3 minutes. This process mellows the sharpness of the kimchi and brings out its natural sweetness.
Step 4
Push the stir-fried kimchi to one side of the pan. In the empty space, add 1 tablespoon of sugar and 1 tablespoon of soy sauce. Let them cook for a moment until they slightly caramelize, which adds a richer depth of flavor.
Step 5
Once the soy sauce and sugar have slightly reduced, mix them thoroughly with the kimchi and continue to stir-fry. Then, add 1 tablespoon of gochugaru (Korean chili powder) and stir-fry for another minute until the color is evenly distributed. Feel free to adjust the amount of gochugaru to your preference.
Step 6
Add 1 bowl of warm cooked rice on top of the well-stirred kimchi mixture. Using a spatula, gently break up the rice and mix it with the kimchi until everything is evenly combined. Ensure each grain of rice is coated with the delicious kimchi seasoning.
Step 7
Once the rice is fluffy and well combined with the kimchi seasoning, spread the rice evenly across the bottom of the pan. Sprinkle 1 paper cup of mozzarella cheese evenly over the top. Reduce the heat to low, cover the pan with a lid, and let it cook for 2-3 minutes until the cheese is fully melted.
Step 8
When the cheese has melted beautifully, carefully fold the rice in half, creating a shape similar to an omelet. This helps to keep the melted cheese contained within the fried rice.
Step 9
Carefully transfer the finished kimchi fried rice to a serving plate. Finally, sprinkle with 2 teaspoons of sesame seeds for garnish. Your Kang’s Kitchen-style kimchi fried rice is ready to be enjoyed! Serve immediately while hot.
