Steak Ingredients

  • 2 Sirloin steaks (at least 2cm thick)
  • 2 Tbsp Olive oil
  • 1/2 tsp Salt (coarse or kosher salt)
  • 1/4 tsp Black pepper (freshly ground)
  • 3-4 cloves Garlic (halved)
  • 1 piece Butter (approx. 10g)
  • 1-2 sprigs Fresh rosemary (optional)

Cooking Instructions

Step 1

The first step to infusing flavor into your steak! Prepare your sirloin steaks and gently pat them dry with paper towels to remove any excess moisture. Then, brush both sides generously with olive oil. Season liberally with salt and freshly ground black pepper, allowing it to sit for at least 15 minutes to marinate. This process helps the seasoning penetrate the meat, resulting in a more flavorful steak.

Prepare the vegetables and aromatics to cook alongside the steak. Cut the yellow and red bell peppers into bite-sized pieces, removing the seeds. Halve the whole garlic cloves. Have a piece of butter and fresh rosemary sprigs ready.

Now, it’s time to sear the steak! Heat a heavy-bottomed skillet or cast-iron pan over high heat until very hot. Add the butter and a drizzle of olive oil. Carefully place the marinated sirloin steak in the hot pan. Add the rosemary sprigs and halved garlic cloves. Sear for 2-3 minutes per side over high heat, until a deep brown crust forms. For extra flavor, you can use the rosemary sprig to baste the steak with the melted butter and pan juices (this technique is called ‘arroser’).

After searing the steak, remove it from the pan and let it rest. Use the remaining butter and juices in the pan to cook the vegetables. Add the cut bell peppers and garlic to the pan and sauté over medium heat for 2-3 minutes until tender-crisp. Season lightly with salt and pepper. These will be your delicious vegetable sides.

Finally, it’s time to plate your delicious steak! Slice the rested steak into bite-sized pieces (about 2cm thick) and arrange them attractively on a plate. Add the sautéed bell peppers and garlic alongside the steak. Serve immediately while warm for the best experience!
