Key Ingredients- 12 large King Prawns (preferably live and fresh)
- 1 cup coarse sea salt (generous amount)
- 1/2 fresh lemon
Flavor Enhancers (Optional)- 1 Tbsp unsalted butter
- 1 pinch fine salt (for seasoning)
- A pinch of black pepper (to taste)
- 1 Tbsp unsalted butter
- 1 pinch fine salt (for seasoning)
- A pinch of black pepper (to taste)
Cooking Instructions
Step 1
Line a baking sheet with aluminum foil, ensuring it covers the entire surface. Spread the coarse sea salt evenly in a thin layer, about 1 cm thick. This creates a bed for the shrimp, ensuring even cooking and infusing them with a subtle salty flavor without direct heat.
Step 2
Wash the lemon thoroughly and slice it thinly, about 0.5 cm thick. These slices will add a refreshing aroma as they grill and help to cut through any potential fishiness.
Step 3
Gently rinse the prawns under cold running water and pat them dry. Using kitchen scissors, trim off the long antennae and the sharp tip of the tail. This makes them easier to handle and eat, and results in a neater presentation.
Step 4
Arrange the prepared prawns in a single layer on top of the salt bed, making sure they don’t overlap too much. Lightly sprinkle the tops of the prawns with fine salt and black pepper to taste. While the salt-grilling itself is flavorful, this initial seasoning enhances the natural sweetness.
Step 5
Distribute the lemon slices artfully among and on top of the shrimp. The citrus will release its fragrant oils during cooking, complementing the seafood beautifully.
Step 6
Dot small pieces of butter over the prawns. As the butter melts, it will add richness and moisture, making the shrimp incredibly succulent and flavorful.
Step 7
Bake in a preheated oven at 220°C (425°F) for approximately 17 minutes. Cooking times can vary depending on your oven, so keep an eye on the shrimp – they should turn a vibrant pink and look plump when done. Serve immediately with your favorite dipping sauce, such as chili sauce, mustard, or a classic soy-vinegar mixture. Enjoy!
