Juicy Pork and Pepper Fritters Recipe

Introducing a special pepper fritter recipe, generously stuffed with juicy pork and a variety of colorful vegetables, fried to a perfect crisp. These peppers, already delicious when fried on their own, offer an even richer flavor when combined with the savory meat filling. Main Ingredients
- 200g ground pork (recommend a cut with moderate fat)
- 7 large Korean green peppers (Asaki peppers)
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp cooking wine (like mirin)
- 2/3 cup finely chopped onion (approx. 80g)
- 2/3 cup finely chopped zucchini (approx. 80g)
- 25g finely chopped carrot
- 20g chopped chives or green onions
- 1 cup frying powder (approx. 100g)
- 1 egg
- Plenty of cooking oil (approx. 4 cups, for deep frying)
Cooking Instructions
Step 1
In a bowl, place the 200g of ground pork. Season generously with 1 tsp salt and 1 tsp black pepper. Add 1 tbsp of cooking wine to help remove any gamey odors and enhance the flavor. Mix well by gently kneading the ingredients together. Let the meat marinate for a while.
Step 2
Finely chop the vegetables that will be mixed with the pork. Chop the onion, zucchini, carrot, and chives (for a fresh aroma) into very small pieces. Finely chopping the vegetables ensures they blend well with the meat filling, providing a pleasant texture.
Step 3
Wash the large Korean green peppers thoroughly under running water and pat them dry. Carefully use a knife to make an incision lengthwise along one side of the pepper, starting near the stem but not cutting all the way through to the other side. (In the video, the seeds were left in; however, if there are many seeds or you prefer less spice, you can lightly shake them out.)
Step 4
Add all the finely chopped vegetables (onion, zucchini, carrot, and chives) to the marinated ground pork. Mix everything thoroughly, kneading the mixture to ensure the vegetables are well incorporated into the meat. This helps create a firmer filling. Taste and adjust seasoning with a little more salt and pepper if needed.
Step 5
Carefully stuff the prepared pork and vegetable mixture into the slit of each pepper. Since the peppers were only slit and not cut in half, gently press the filling in and slightly pinch the pepper closed. This will help the filling stay inside and maintain a neat shape. Use a chopstick or your finger to press the filling in firmly.
Step 6
In a wide bowl, combine 1 cup of frying powder and 1 egg. Gradually add water while whisking to create a batter. The batter should be neither too thin nor too thick, flowing smoothly. (You may need about 150-180ml of water, adjust according to the brand of frying powder.)
Step 7
First, lightly coat the stuffed peppers evenly with dry frying powder. This step helps the batter adhere well to the peppers in the next stage. Ensure an even coating.
Step 8
Heat about 4 cups of cooking oil in a deep pan over medium heat. To check the oil temperature, drop a little bit of batter into the oil. If it floats to the surface immediately, the oil is ready for frying. Carefully add the battered pepper fritters to the hot oil, frying until golden brown. Avoid overcrowding the pan, as this can lower the oil temperature.
Step 9
Once the fritters are golden brown all over, remove them from the oil and let them drain briefly. To make them extra crispy, reheat the oil to about 180°C (350°F) and deep-fry the fritters again for a second time. This double-frying technique ensures the outside becomes exceptionally crispy and the pork filling is cooked through perfectly.
Step 10
The pork filling is seasoned sufficiently, so these fritters are delicious on their own without a dipping sauce. However, you can certainly serve them with your favorite sauce if you wish. They pair well with various sauces like chili sauce or soy-based dips. We found that dipping them in spicy ‘Buldak’ sauce created a particularly fantastic combination.
