Chicken Ingredients
  • 3 whole chickens
  • Herb salt, to taste
  • 1 Tbsp minced garlic
  • 1 cup cooking wine (or mirin)
  • 5 Tbsp olive oil

Cooking Instructions

Step 1

First, prepare the three whole chickens. For each chicken, trim away the fatty part near the tail end. Also, remove any excess skin or fat from the neck area. Reach inside the cavity and gently press to remove any remaining internal organs or blood clots. This thorough cleaning will help ensure a clean flavor and prevent any unpleasant odors.

Step 2

Next, cut the prepared chickens into four serving pieces each. This size is ideal for cooking evenly in the air fryer and for convenient eating later.

Now, it’s time to season the chicken. In a large bowl, place the chicken pieces. Generously sprinkle them with herb salt for initial seasoning. Add 1 tablespoon of minced garlic, which adds a wonderful aromatic depth. Pour in 1 cup of cooking wine (or mirin) to help tenderize the meat and eliminate any gamey smell. Gently massage the seasonings into the chicken with your hands, ensuring each piece is well-coated. Finally, add 5 tablespoons of olive oil and mix again until the chicken pieces are lightly coated and glistening. This marination step is key to making the chicken incredibly tender and juicy.

Step 4

Arrange the marinated chicken pieces in the air fryer basket. Begin the cooking process. Keep in mind that cooking times and temperatures can vary depending on your specific air fryer model and its wattage. Step 5

My air fryer has a convenient ‘Roast Chicken’ preset program. When I select this, it automatically sets the cooking time to approximately 20 minutes. Utilizing built-in programs can simplify the cooking process and yield excellent results.

After the initial 20-minute cooking cycle, I checked the chicken. The top side looked beautifully golden and appetizing.

Step 7

To ensure even cooking, it’s important to flip the chicken pieces. Turn them over in the air fryer basket and continue cooking for an additional 10 minutes. This second cooking phase will ensure that the bottom side is also perfectly browned and cooked through.

Step 8

After the final 10 minutes of cooking, the roasted chicken is ready! It’s wonderfully golden brown, and the aroma is fantastic. You can now serve it immediately.
