Main Ingredients- 2 thick-cut Chuck Eye Steaks (about 2-3 cm thick)
- Brussels sprouts, as needed
- Cherry tomatoes, as needed
Sauce & Oil- Your favorite steak sauce (e.g., Jack Daniel’s Steak Sauce)
- Generous amount of Extra Virgin Olive Oil

- Freshly ground black pepper

Cooking Instructions
Step 1
Remove the steaks from the refrigerator at least 30 minutes before cooking to allow them to come to room temperature. Bringing the meat to an even temperature throughout ensures a more tender and juicy steak when cooked.
Step 2
Season the steaks generously on all sides with coarse salt and freshly ground black pepper. It’s best to season just before cooking. Ensure an even coating.
Step 3
Prepare your side vegetables. Brussels sprouts and sweet cherry tomatoes add wonderful flavor and color to your steak. (If you have fresh vegetables from your garden, even better!)
Step 4
Lightly toss the prepared Brussels sprouts and cherry tomatoes with a drizzle of olive oil and a pinch of salt. Set aside to be cooked alongside the steak. You can pan-sear them or roast them in the oven.
Step 5
Heat a heavy-bottomed pan (cast iron is recommended) over high heat. Add a generous amount of extra virgin olive oil and let the pan get very hot. Carefully place the seasoned steaks into the smoking hot pan. You should hear a strong sizzle.
Step 6
Cooking time depends on your desired doneness. For rare, sear for about 2 minutes per side. For medium-rare, try 3 minutes per side. For medium-well, about 3.5 minutes per side, and for well-done, about 4 minutes per side. Adjust times based on the thickness of your steak and the heat of your pan. Monitor the surface color.
Step 7
I like to enhance the flavor with my favorite Jack Daniel’s steak sauce. Pour the sauce into the same pan after searing the steaks, warm it slightly, and then generously ladle it over the finished steak. (Optional: You can add butter, garlic, or rosemary to the pan for extra flavor.)
