Humburg Steak Ingredients- Beef for Bulgogi (thinly sliced) 800g
- 1 Onion (medium size)
- 150g Bell Pepper (various colors like red, yellow)
- 150g Green Onion (use both white and green parts)
- 1 Avocado
- 10 Cherry Tomatoes
- 1 Egg
- 6 Tbsp Breadcrumbs
- 4 pieces Nurungji (scorched rice) for frying
Humburg Steak Seasoning- 1 Tbsp Worcestershire Sauce
- 1 Tbsp Oyster Sauce
- 1 tsp Salt
- 1 tsp Sugar
- 1 Tbsp Sesame Oil
- 1 tsp Black Pepper
- 1 Tbsp Toasted Sesame Seeds
Humburg Steak Sauce- 1 Tbsp Worcestershire Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Sriracha Sauce (adjust to your spice preference)
- 2 Tbsp Oligodang (corn syrup)
- 1 Tbsp Lemon Juice (or lemon vinegar)
- 1 Tbsp Worcestershire Sauce
- 1 Tbsp Oyster Sauce
- 1 tsp Salt
- 1 tsp Sugar
- 1 Tbsp Sesame Oil
- 1 tsp Black Pepper
- 1 Tbsp Toasted Sesame Seeds

- 1 Tbsp Sriracha Sauce (adjust to your spice preference)

Cooking Instructions
Step 1
Finely chop the thinly sliced beef bulgogi using a knife. This will create a texture similar to minced meat while retaining some bite.
Step 2
The generous 800g of beef can be portioned for about 200g per person for a family of four. Place the finely chopped beef in a bowl.
Step 3
Mince the garlic finely to add a rich flavor to the seasoning.
Step 4
Finely chop the green onions, using both the white and green leafy parts. The green leaves especially add a wonderful aroma.
Step 5
Finely chop the onion and bell peppers (red, yellow, etc.). Instead of mincing them too finely, chop them slightly coarser for a more satisfying texture when chewing.
Step 6
Prepare the seasoning ingredients for the humburg steak mixture. Add 1 Tbsp of oyster sauce, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds for enhanced flavor. Then, add 1 tsp of salt and 1 tsp of sugar.
Step 7
Grind about 1 tsp of fresh black pepper and crack in 1 egg. The egg will help bind the mixture together.

Add all the prepared ingredients and seasonings to the bowl. Knead the mixture gently with your hands until it becomes cohesive and slightly sticky. This step is crucial to ensure the humburg steaks hold their shape without falling apart.

Finally, add the chopped green onions and mix lightly. The refreshing taste of green onions complements the beef beautifully, completing the humburg steak mixture.

Preheat your oven to 200°C (392°F). Lightly grease an oven tray with oil to prevent the humburg steaks from sticking. They will bake for 20 minutes in the preheated oven.

Fill muffin cups about 80% full with the humburg steak mixture and press down firmly to shape. You’ll get 12 humburg steaks from the muffin tins. If there’s any leftover mixture, you can form one additional steak in a regular shape to bake.

While the humburg steaks are baking, prepare the side dishes. Wash the sprouts and cherry tomatoes thoroughly. Soaking them in lightly salted water for about 15 minutes will help remove impurities and disinfect them. Also, fry the nurungji until crispy to serve alongside the humburg steaks.

Let’s make the sauce to enhance the humburg steaks further. In a small saucepan, combine 1 Tbsp Worcestershire sauce, 1 Tbsp oyster sauce, 1 Tbsp Sriracha sauce (feel free to add more for extra spice), 2 Tbsp oligodang, and 1 Tbsp lemon juice. Simmer gently over low heat until slightly thickened.

Voila! Here are the appetizing humburg steaks, fresh from the oven after baking at 200°C (392°F) for 20 minutes. They are golden brown on the outside and wonderfully moist inside.
