First, prepare the baby potatoes to serve alongside. Wash the baby potatoes thoroughly and cut them into large quarter pieces. Place them in a bowl, drizzle with a little olive oil, salt, and pepper, and toss to coat evenly. Cover with plastic wrap or a lid and microwave for about 5 minutes until tender. This method ensures the potatoes are soft and perfect for serving with steak.

Take the Hanwoo sirloin steak out of the refrigerator about 1 hour before cooking to bring it to room temperature. This helps the steak cook evenly throughout. Gently pat the surface of the meat dry with paper towels to remove any excess moisture. Season both sides generously with salt and pepper, then lightly coat with olive oil and let it rest.

Let’s make the chimichurri sauce for a unique flavor. Chimichurri is a sauce served with meat in Europe, similar in function to Korean pickled vegetables (jangajji). You can use any kind of pickled vegetables, but here we’ve finely chopped chili pickles, garlic stem pickles, and cucumber pickles. Finely chop some onion and add it to the mixture. Combine with whole grain mustard, sesame oil, red pepper flakes, minced garlic, and a pinch of pepper, then mix well. While the original recipe includes parsley, you can omit it if you don’t have it. Let the mixed sauce sit for a bit to allow the flavors to meld.

Now it’s time to cook the steak! Heat a pan over high heat until it’s very hot. Place the sirloin steak in the pan and sear it until you hear a sizzling sound (‘chiiiik~’). Once one side is golden brown, flip it over and cook the other side. You can also add mushrooms and whole garlic cloves to the pan to cook alongside for extra flavor. When the steak is almost done, add a piece of butter to the pan and let it melt. Spoon the melted butter over the steak as it cooks (this is called basting or ‘arroser’) to enhance its flavor. Don’t forget to sear the sides of the steak as well for even cooking.

Add the pre-microwaved baby potatoes to the same pan where the steak was cooked. Sauté them in the steak juices and butter released from the meat. This will infuse the potatoes with wonderful flavor, making them even more delicious.

You’ll see the juices still in the steak when you cut into it after resting.
