Cooking Instructions
Step 1
First, to ensure the most delicious result, thaw the frozen beef rib meat by transferring it to the refrigerator the day before cooking. This slow thawing process helps retain the meat’s juices. (Refer to the product description for ‘Sunsu Bon-ga’). For a more budget-friendly option, consider purchasing through Kakao Shopping’s ‘Tok Deal’ service. (I was in a hurry and bought it at the regular price! 😅)
Step 2
The Sunsu Bon-ga beef rib meat typically comes in 3 packs of 200g each. Today, I’m using just one pack for my son’s dinner.
Step 3
Once thawed, remove the rib meat from its packaging and gently pat it dry with paper towels to absorb any excess moisture. You might notice some areas with more fat, but this fat renders beautifully during cooking, keeping the meat tender and succulent, never dry.
Step 4
Prepare the well-fermented kimchi by lightly squeezing out the excess liquid and ensuring it’s well-coated with its flavorful seasoning. The kimchi’s tangy notes will beautifully complement the richness of the beef.

Now, preheat your grill pan or skillet thoroughly. Once hot, place the beef rib meat and the prepared kimchi onto the pan to grill. To achieve a cleaner and more savory flavor for the kimchi, it’s recommended to grill it with a little olive oil rather than relying solely on the beef’s rendered fat.
