Dumpling Filling Ingredients

  • 1kg Ground Pork (with moderate fat content)
  • 250g Pork Fat (for extra tenderness)
  • 20g Green Onion (white part, finely chopped)

Seasoning & Coating Ingredients

  • 1 Egg
  • 3 Tbsp Soy Sauce
  • 1g Salt (adjust to taste)
  • 4g Garlic Powder (or 1 Tbsp minced garlic)
  • 2g Black Pepper
  • 2g Ginger Powder (or 1/2 tsp minced ginger)
  • 50g Tapioca Starch (for coating the dumplings)
  • 2-3 Liters Water (for boiling/steaming)

Cooking Instructions

Step 1

First, in a mixing bowl, combine the ground pork and pork fat. Knead the mixture with your hands for about 3 minutes until it becomes sticky and well-combined. This step helps create a tender and cohesive filling.

Step 1

Step 2

Add the finely chopped green onion, garlic powder, soy sauce, salt, black pepper, and ginger powder to the pork mixture. Gently mix for about 1 minute, ensuring the seasonings are evenly distributed without overworking the meat.

Step 2

Step 3

Once the meat mixture is partially combined, crack in the egg and mix for another minute. The egg will help bind the filling together, making it easier to shape into dumplings and adding a tender texture. Your delicious dumpling filling is now ready!

Step 3

Step 4

Spread a generous layer of tapioca starch onto a wide plate or tray. Take a spoonful of the dumpling mixture and roll it into a ball. Then, gently roll the ball in the tapioca starch until evenly coated. To ensure an even coating and a neat shape, lightly roll the ball; avoid pressing too hard, which can cause the starch to clump. It’s best to coat a few dumplings at a time.

Step 4

Step 5

Set the coated dumplings aside. Meanwhile, bring 2-3 liters of water to a boil in a pot over high heat. The water needs to be simmering vigorously for steaming.

Step 5

Step 6

While the water heats up, line a steamer basket with parchment paper. Once the water is boiling, carefully arrange the tapioca-coated dumplings in the steamer basket, ensuring they don’t touch each other. Place the steamer basket over the boiling water and cover tightly with a lid.

Step 6

Step 7

Steam the dumplings over high heat for approximately 12-15 minutes. Cooking times may vary depending on the size of the dumplings and the type of pot and steamer used. If you’re using a stainless steel pot, you might want to remove one dumpling and carefully cut it open to check if the filling is fully cooked through. If you placed the steamer over the water before it started boiling vigorously, steam for about 20 minutes to be safe.

Step 7

Step 8

Your steaming hot ‘gulim mandu’ are ready! They are absolutely delicious served immediately, with juicy goodness bursting with every bite. Once cooled, you can freeze them and then cook them directly from frozen in soups or as steamed dumplings without thawing – they’re still wonderfully tasty! Enjoy your healthy and flavorful gulim mandu for a delightful meal!
