Grilled Pork Neck Ingredients- 2 thick cuts of pork neck
- 1 stalk of green onion
- 5 cloves of garlic
- A little cooking oil
- 1 Tbsp water
Spicy & Sweet Dipping Sauce- Coarse salt, to taste (for sprinkling)

- 1/2 Tbsp chili powder
- 1 Tbsp soy sauce
- 1 Tbsp vinegar
- A little sesame seeds

Cooking Instructions
Step 1
Let’s start by making the delicious dipping sauce! In a small bowl, combine 1/2 Tbsp granulated sugar, 1/2 Tbsp chili powder, 1 Tbsp soy sauce, and 1 Tbsp vinegar. Mix well. Finally, sprinkle in a little sesame seeds for added aroma. Making this ahead of time will make your ingredient preparation much smoother.
Step 2
Cut the green onion into bite-sized pieces (about 5cm long). Lightly smash the garlic cloves with the back of a knife or slice them thinly. Heat a lightly oiled pan over low heat. Add the smashed garlic and chopped green onion and stir-fry gently until their moisture evaporates, being careful not to burn them. This step helps reduce any gamey smell from the pork and adds flavor.
Step 3
Push the garlic and green onion to one side of the pan, and increase the heat to high. Once the pan is hot again, place the thick pork neck cuts onto the pan and sear them on both sides until golden brown. It’s crucial to sear the surface quickly over high heat to lock in the juices.
Step 4
Lightly sprinkle coarse salt on both sides of the pork neck. Let it sit for a moment to allow the salt to penetrate, which will make it even more delicious.
Step 5
Once the pork is sufficiently seared, cut it into bite-sized pieces (about 2-3cm). Now, reduce the heat to medium. Carefully pour 1 Tbsp of water along the edges of the meat in the pan. This will help keep the pork incredibly moist and ensure a crispy exterior. You should hear a gentle sizzling sound.
Step 6
As the water boils and steams, it will envelop the meat, cooking it gently and keeping it juicy. The bottom of the pan should start to turn a lovely golden brown. At this point, flip the pork and cook the other side until it’s also golden brown and moist. Be careful not to overcook, as this can make the meat tough.
Step 7
Once all sides are perfectly golden brown and cooked, turn off the heat. Arrange the beautifully grilled pork neck on a warm plate. Dip the pieces into the prepared spicy and sweet sauce for the ultimate grilled pork neck experience. It’s also delicious served with fresh lettuce wraps!
