Create incredibly tender and succulent boiled pork belly (Suyuk) that locks in all its juices! This dish is perfect for entertaining guests and is surprisingly easy to make at home. Enjoy a delicious, restaurant-quality Suyuk with minimal effort!
For the Boiled Pork Belly- 1.2kg Pork Belly (preferably a thick cut)
- 3L Water (enough to cover the pork)
- 3 Tbsp Doenjang (soybean paste) (helps remove gamey smell and adds depth)
- 5 Bay Leaves (for aromatic flavor)
- 1/2 Onion (can be used with skin on)
- 1 Leek (use both white and green parts)
For Seasoning- Pinch of Salt
- Pinch of Black Pepper
- Pinch of Salt
- Pinch of Black Pepper
Cooking Instructions
Step 1
Gently pat the surface of the pork belly with paper towels to remove any excess blood. This simple step helps reduce any gamey odors.
Step 2
Evenly sprinkle salt and black pepper on all sides of the pork belly. I used about two pinches of salt per side. Let the seasoned pork belly rest at room temperature for about 30 minutes to allow the flavors to penetrate.
Step 3
In a large pot, add 3 liters of water and dissolve 3 tablespoons of doenjang completely. Using a generous amount of doenjang is key to effectively neutralizing any porky smells.

Add the halved onion and the whole leek to the doenjang water. Bring the water to a rolling boil over high heat. Boiling the water first helps to seal the juices within the meat.
Step 5
While the water is coming to a boil, sear all sides of the seasoned pork belly over medium-high heat for 2-3 minutes per side until lightly browned. This crucial step seals in the juices, ensuring a tender and moist result. Don’t skip this tip!

Once the water is at a full boil, carefully place the seared pork belly into the pot.
Step 7
Reduce the heat to medium, cover the pot, and let it simmer for 40 minutes. The cooking time may vary slightly depending on the thickness of the pork belly.
