How to Make Authentic Korean Beef Gyudon at Home
Japanese cuisine is incredibly popular these days, isn’t it? With the rise of single-person households, simple yet delicious Japanese dishes are gaining more attention. Today, I decided to make a truly delicious Gyudon using some Korean beef sirloin that I had on hand. It’s a magical recipe that will have everyone in the family clearing their plates in no time! Perfect for a solo meal or for sharing with loved ones, let’s get started on making Korean Beef Gyudon.
Main Ingredients- 120-130g Korean beef sirloin for bulgogi
- 1/2 medium onion
- A small piece of fresh ginger, julienned
- 1/2 cup (100ml) water
- 2 Tbsp soy sauce
- 2 Tbsp mirin (or cooking sake)
- 0.5 Tbsp sugar
- 1 Tbsp soju (or cheongju)
- 1 handful enoki mushrooms
- 2 stalks scallions (green onions)
- 1 fresh egg yolk
- 1 bowl warm rice
Cooking Instructions
Step 1
First, gently press the Korean beef sirloin for bulgogi with paper towels to absorb any excess blood. This step helps to reduce any gamey odor and ensures a cleaner flavor.
Step 2
Peel the onion and slice it thinly into strips about 0.5cm thick. Slicing them uniformly will help them cook evenly and absorb the seasoning consistently.
Step 3
Wash the scallions thoroughly and chop them finely. These will be used as a garnish, adding a fresh, aromatic touch to the Gyudon.
Step 4
In a medium saucepan or pot, combine 1/2 cup of water, the julienned fresh ginger, and 1 Tbsp of soju. Bring this mixture to a boil over medium-high heat. Once boiling, add the beef sirloin, from which you’ve blotted the blood. Use a spatula to gently separate the meat and cook it until it starts to change color.
Step 5
As the beef cooks, add the soy sauce (2 Tbsp), mirin (2 Tbsp), and sugar (0.5 Tbsp) to the pan. Stir well to combine the seasoning. Once the sauce begins to simmer, add the handful of enoki mushrooms and the sliced onions. Continue to cook over medium-low heat until the onions become translucent and tender. The natural sweetness from the mushrooms and onions will enhance the overall flavor.
Step 6
Serve the warm rice in a bowl. Generously spoon the seasoned beef, mushrooms, and onions over the rice. Garnish with the finely chopped scallions. For an extra touch of richness, add a fresh egg yolk to the center. Gently mix everything together with your chopsticks before eating for a wonderfully rich flavor and tender texture that will fill your mouth. Enjoy your delicious meal!
