Transform leftover Japchae into a delightful new dish! These Japchae Egg Dumplings are a creative fusion, combining the chewy texture of glass noodles and crisp vegetables wrapped in a tender, savory egg crepe. Perfect as a fun snack or a light meal.
Main Ingredients- Cooked Japchae, 2 cups (measured with a paper cup)
- Fresh eggs, 3 large
- Cooking oil, as needed (for coating the pan)
Cooking Instructions
Step 1
First, measure out approximately 2 cups of your prepared Japchae using a standard paper cup. The amount of Japchae will influence the size and number of dumplings you make.
Step 2
Place the measured Japchae into a bowl. Using kitchen scissors, finely chop the Japchae into pieces about 1 cm long. This will help it mix well with the egg and form a cohesive filling. Chopping it ensures a better texture and easier handling when forming the dumplings.

In a separate bowl, crack the 3 fresh eggs. Add the finely chopped Japchae to the eggs and whisk them together thoroughly using chopsticks or a whisk until well combined. Ensure the egg mixture evenly coats the Japchae strands.
