Main Ingredients- Leftover Japchae (for 1 serving)
- Scallions (half a bunch)
- Eggs (4)
- Salt (a pinch)
- Pepper (a pinch)
Cooking Instructions
Step 1
Take out the leftover japchae from your freezer. Use scissors to cut it into small, bite-sized pieces. This makes it much easier to mix with the batter and use as a dumpling filling.
Step 2
Wash the scallions thoroughly and thinly slice the green parts. The crisp texture and fresh aroma of the scallions will enhance the flavor of your egg dumplings.
Step 3
In a large bowl, crack the 4 eggs. Add a pinch of salt and pepper to season and eliminate any eggy smell. Whisk gently with a fork until well combined to create the egg mixture.
Step 4
Add the chopped japchae and sliced scallions to the egg mixture. Gently mix everything together until the japchae is evenly coated with the egg batter, forming your dumpling filling.
Step 5
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Pour one ladleful of the japchae and egg mixture onto the preheated pan and spread it thinly. Be careful not to use heat that’s too high, as it can burn the eggs.
Step 6
Once the bottom starts to turn golden brown and set, carefully fold the mixture in half using a spatula or chopsticks. Cook until the inside is completely cooked through. Your delicious Japchae Egg Dumplings are ready to enjoy!
