- 800ml Water
- 10 stalks Chives
- 1 sheet Square Fish Cake
- 1/4 Carrot
- 35g Enoki Mushrooms
- 2 Tbsp Cooking Oil
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Pinch of Sesame Seeds
- Pinch of Salt
Cooking Instructions
Step 1
Let’s begin by gathering all the ingredients you’ll need for this delicious Dongji Japchae Cold Noodles! I initially considered adding soy sauce and sugar in case it was bland, but surprisingly, the naengmyeon broth provided the perfect seasoning on its own.
Step 2
Let’s dive into making the Dongji Japchae Cold Noodles! First, thoroughly wash 10 stalks of chives, 1/4 carrot, and 35g of enoki mushrooms under cool running water.
Step 3
Prepare the washed vegetables for cooking. Cut the chives into approximately 4cm lengths. Peel the carrot and slice it into thin matchsticks. Trim the base of the enoki mushrooms and gently separate them into strands. Slice the square fish cake into similar long strips.

Now, it’s time to cook the noodles. Pour 800ml of water into a pot and bring it to a rolling boil over high heat. Once the water is vigorously boiling,

After about 3 minutes, drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Squeeze out as much water as possible with your hands, then place them in a colander to drain completely.
