Essential Ingredients- 2 cans of corn (drained)
- 2 Tbsp butter
- 3 Tbsp mayonnaise
- 2 Tbsp sugar
- Pinch of salt (if using unsalted butter)
- 3 Tbsp milk (optional, for a creamier texture)
- 2-4 Tbsp grated Parmesan cheese (to taste)
- 1 tsp chili powder (to taste)
- Pinch of parsley flakes (for garnish)
Cooking Instructions
Step 1
First, drain the canned corn thoroughly in a sieve. Excess water can cause the corn to clump together when sautéing.
Step 2
In a pan over medium-low heat, melt 2 Tbsp of butter. Add 3 Tbsp of mayonnaise and 2 Tbsp of sugar. These three core ingredients form the base of our ‘magic’ sauce! For an even creamier consistency, stir in 3 Tbsp of milk. (If you are using salted butter, you can skip adding extra salt later. If using unsalted butter, add just a tiny pinch of salt to season.)
Step 3
Gently simmer the mixture over low heat, stirring until the butter and sugar are completely melted and the sauce is smooth. Be careful not to let it burn.
Step 4
Add the drained corn to the pan and sauté with the sauce, ensuring each kernel is evenly coated. Mix well as you stir.
Step 5
Continue to cook until the moisture has evaporated and the sauce has thickened, coating the corn kernels nicely. Sautéing until it’s slightly crispy makes it even tastier!
