Main Ingredients
  • 1 bowl cooked rice (warm)
  • 1 can tuna (drained)
  • 1/2 onion (finely diced)
  • 1 Cheongyang chili pepper (optional, finely chopped)
  • 2 eggs

Seasoning & Batter
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1 Tbsp fish sauce
  • 4 Tbsp pancake mix (or all-purpose flour)

Cooking Instructions

Step 1

First, prepare the vegetables. Finely dice half an onion. If you enjoy a spicy kick, remove the seeds from one Cheongyang chili pepper and chop it very finely. (If you don’t like spicy food, you can omit it or use a regular chili pepper.)

Step 2

In a large bowl, combine 4 tablespoons of pancake mix, 2 eggs, the diced onion, and the chopped chili pepper. Add 1/4 teaspoon of salt, 1/2 teaspoon of sugar, and 1 tablespoon of fish sauce. Whisk or stir with a spoon until there are no lumps, forming the base of the batter. It’s important to ensure the seasonings are evenly distributed.

Step 3

Add 1 bowl of warm cooked rice to the batter. Gently mix with a spatula or spoon, being careful not to mash the rice grains. Keeping the rice grains intact will give a better texture when cooked. Mix everything thoroughly one last time to ensure all ingredients are well combined without clumping.

Step 4

Heat a pan over medium-low heat and add a generous amount of cooking oil. Scoop about one tablespoon of the batter onto the pan and use the back of the spoon to flatten it into a round shape. Once one side is golden brown and cooked, flip it over and cook the other side until golden brown as well. Cook until both sides are nicely crispy, and your delicious Tuna & Rice Pancakes are ready!
