  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 2 servings
  • Difficulty : Anyone

Rice Bowl Ingredients

  • 350g ground pork (slightly fatty is best for flavor)
  • 1 stalk green onion (use both white and green parts)
  • 1/2 Korean chili pepper (optional, for a spicy kick)
  • 2 bowls of warm cooked rice
  • 4 Tbsp cooking oil

Savory Soy Sauce Seasoning

  • 2 Tbsp soy sauce
  • 2/3 Tbsp oyster sauce (for enhanced umami)
  • 2 Tbsp Worcestershire sauce (adds depth)
  • 2 Tbsp cooking sake or mirin (removes any porky smell)
  • 1 Tbsp sugar (for that perfect sweet and savory balance)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp minced ginger (optional, but highly recommended for flavor)
  • 1 tsp black pepper

Cooking Instructions

Step 1

First, let’s prepare the aromatics and vegetables that will add flavor and texture to our rice bowl. It’s important to finely mince the green onion, rather than chopping it into large pieces. This ensures the green onion blends well with the ground pork and sauce, preventing it from standing out too much and creating a harmonious bite. Mince it finely, almost like you would for fried rice!

Step 1

Step 2

If you enjoy a bit of heat, finely mince the Korean chili pepper as well. If you’re making this for children or prefer a milder taste, you can omit it or substitute it with a red bell pepper.

Step 2

Step 3

Now, let’s get started on making the delicious soboro topping! Heat 4 tablespoons of cooking oil in a skillet or wok over medium heat.

Step 3

Step 4

Once the oil is shimmering, add all 350g of the ground pork to the pan.

Step 4

Step 5

Cook the pork over medium-low heat, stirring occasionally, for about 5 minutes, or until about 95% cooked. It’s crucial not to overcook it at this stage, as it can become tough later. The pork should still show a hint of pink in places, as seen in the photo. This slight undercooking will ensure a more tender texture in the final dish.

Step 5

Step 6

After about 5 minutes, increase the heat to medium and add 1/2 tablespoon of minced ginger.

Step 6

Step 7

Next, add 1 tablespoon of minced garlic.

Step 7

Step 8

With the garlic and ginger added, stir-fry for about 1 minute, allowing the aromatics to infuse the pork with their fragrance. You’ll start to smell a wonderful aroma developing!

Step 8

Step 9

It’s time to add the seasonings and build those delicious flavors! Start by adding 1 tablespoon of sugar to bring in a touch of sweetness, and mix it in quickly.

Step 9

Step 10

Follow this with 1 teaspoon of black pepper. The slight peppery kick will enhance the overall flavor profile.

Step 10

Step 11

Add 2 tablespoons of cooking sake or mirin to eliminate any potential pork odor and add a subtle savory note. The alcohol will evaporate during cooking, leaving behind only deliciousness.

Step 11

Step 12

After adding the sugar, pepper, and sake, stir and cook for about 30 seconds to ensure the seasonings are well incorporated into the pork.

Step 12

Step 13

Now, it’s time for the main soy sauce-based seasoning. To prevent burning, reduce the heat to low. Pour 2 tablespoons of soy sauce around the edges of the pan. As it hits the hot pan, it will caramelize slightly, adding another layer of flavor.

Step 13

Step 14

Immediately add 2/3 tablespoon of oyster sauce. Oyster sauce is a magic ingredient for boosting umami!

Step 14

Step 15

For that rich, savory depth that pairs so well with pork, add 2 tablespoons of Worcestershire sauce. Its tangy and slightly sweet notes complement the pork beautifully.

Step 15

Step 16

Add the minced Korean chili pepper you prepared earlier. Its spicy flavor will cut through any richness.

Step 16

Step 17

Finally, add all the finely minced green onion.

Step 17

Step 18

With all the ingredients in the pan, turn the heat up to high and stir-fry rapidly for about 1 minute! This quick sear will create a slightly caramelized exterior on the pork, intensifying its flavor. Be careful not to overcook, as this can make the pork dry and tough. Aim for that quick, high-heat finish to meld the flavors beautifully.

Step 18

Step 19

Your delicious Pork Soboro topping is ready! Now, let’s prepare the rice. Make sure your rice is warm and fluffy. You can optionally sprinkle some toasted seaweed flakes or sesame seeds over the rice for extra flavor.

Step 19

Step 20

Generously spoon the freshly made pork soboro over the warm rice. The key is to pile it high, covering most of the rice so none is visible! This generous topping is what makes the dish so satisfying.

Step 20

Step 21

And there you have it – a perfectly delicious Pork Soboro Rice Bowl! Enjoy it immediately while it’s warm for the best flavor. Bon appétit!
