- 1/2 Onion
- 1 Green Onion stalk
- 2 Tbsp Minced Garlic
- 5 Tbsp Red Pepper Flakes (Gochugaru)
- Cooking Oil, for frying
Cooking Instructions
Step 1
1. Let’s start with the star of the show: the spicy paste! Finely slice the onion and green onion. (Tip: A ratio of 1:1 onion to green onion and 0.5 minced garlic creates a balanced flavor.) 2. In a pan, combine the sliced onion, green onion, and minced garlic. Pour in enough cooking oil to generously coat the ingredients, almost like deep-frying them slowly. 3. Cook over low heat, allowing the ingredients to slowly fry and their moisture to evaporate. This slow frying is key to developing a deep flavor. 4. Once all the moisture has evaporated and the ingredients are golden brown and fragrant, remove the pan from the heat. Stir in the red pepper flakes while the mixture is still warm but not scorching hot. Mix well. (Caution: Add gochugaru after letting the oil cool slightly to prevent burning.)
Step 2
Shred some cabbage for a refreshing crunch and chop some green onions for added aroma. Set these aside.
Step 3
Cut the pork loin into bite-sized pieces. Measure out about half the amount of frying mix as pork by volume for the batter.
Step 4
Add the frying mix to the pork pieces. Gradually add a small amount of water, mixing until you achieve a thick batter that coats the pork well. It should be slightly stiff, not runny.
Step 5
In a deep pan or pot, heat a generous amount of cooking oil over medium heat. Once the oil is hot enough (a drop of batter should sizzle immediately), carefully drop the battered pork pieces into the oil. To prevent them from clumping together, gently separate them with chopsticks or a fork as they fry. Fry until golden brown and crispy.
Step 6
Remove the fried pork bits from the oil and place them on a paper towel-lined plate to drain excess oil. Letting them cool slightly will make them even crispier.
Step 7
Now, let’s cook the ramen! Use a bit more water than you normally would for a single serving. Once boiling, add the ramen seasoning packet and stir in 1-2 tablespoons of your prepared spicy paste for an extra kick. Adjust the amount of paste to your preferred spice level.
Step 8
When the broth returns to a rolling boil, add the shredded cabbage and cook for a minute or two until slightly tender.
Step 9
Add the ramen noodles and cook according to package directions. Once the noodles are cooked, swirl in the beaten egg and sprinkle with chopped green onions. Carefully transfer the ramen to a serving bowl. Finally, generously top with the crispy fried pork for the ultimate ‘Gang Sik Dang’ style Pork Ramen!
