Here’s a fantastic side dish that’s quick to make and incredibly delicious: Mayak Gyeranjang, soft-boiled eggs marinated in a savory soy sauce mixture. Instead of simmering, we simply soak perfectly soft-boiled eggs in a flavorful marinade, making it incredibly simple to prepare. These eggs are so addictive they’re nicknamed ‘mayak’ (narcotics) because they’ll have you reaching for more with every bite, especially served over rice!
Main Ingredients- 10 Eggs
- 1 tsp Salt
- A little Vinegar (for boiling)
- 1 Red chili pepper
- 1/4 Onion
- 5 Scallions
Mayak Marinade- 150ml Soy Sauce
- 200ml Dried Kelp Broth (Dashima Yuksu)
- 3-4 Tbsp Sugar
- 2 Tbsp Corn Syrup (Oligodang)
- 1 tsp Minced Garlic
- 150ml Soy Sauce

Cooking Instructions
Step 1
Fill a pot with enough water to cover the eggs. Add 1 teaspoon of salt and a splash of vinegar (this helps make the shells easier to peel). Bring the water to a boil over high heat, then reduce to medium heat and cook for 8 to 9 minutes. For a softer yolk, aim for 8 minutes; for a firmer one, cook for 9 minutes.
Step 2
Immediately transfer the boiled eggs to cold water to cool them down. This stops the residual heat from overcooking the yolks and makes peeling much easier. Carefully peel the cooled eggs.
Step 3
Finely mince the red chili pepper and onion after washing and deseeding them. Thinly slice the scallions. Having these vegetables prepped makes assembling the marinade much quicker.
Step 4
Now, let’s make the kelp broth. In a saucepan, combine 200ml of water with 2-3 pieces of dried kelp. Simmer for about 5 minutes. Allow the broth to cool completely before using it in the marinade. Using hot broth can alter the flavor balance.

In a bowl or a jar suitable for marinating, combine 150ml of soy sauce, the completely cooled kelp broth (200ml), 3-4 tablespoons of sugar, 2 tablespoons of corn syrup, and 1 teaspoon of minced garlic. Stir well to create the marinade. Feel free to adjust the sugar to your preferred sweetness level.
Step 6
Place the peeled soft-boiled eggs into a container. Pour the prepared Mayak marinade over the eggs, ensuring they are fully submerged. Cover the container and refrigerate for at least 4 to 5 hours to allow the flavors to meld beautifully. Your Mayak Gyeranjang is almost ready!
Step 7
After marinating for at least half a day, take out the container. You’ll see that the soy sauce mixture has beautifully infused into the eggs, creating a delicious Mayak Gyeranjang. Gently remove the eggs, rinse them lightly if desired, and serve them over warm rice for an incredibly satisfying meal.
