Main Ingredients
  • 6 fresh eggs
  • 1 white part of a leek (about 20cm long)
  • 1/2 onion
  • 1 chili pepper (for a hint of spice)

  • 1 cup water (150ml)
  • 1/3 cup oligosaccharide (50ml, adjust sweetness to taste)
  • 1 Tbsp vinegar

Cooking Instructions

Step 1

In a pot, add enough water to cover the eggs. Bring the water to a rolling boil over high heat. Once boiling, carefully lower the eggs into the water to prevent cracking. Add 1 tablespoon of salt and 2-3 tablespoons of vinegar to the water. The vinegar helps to strengthen the eggshells and speed up the cooking time. Reduce the heat to medium and boil for exactly 7 minutes. This duration will result in perfectly soft-boiled eggs with the yolk beautifully centered.

Step 2

Immediately transfer the perfectly boiled eggs to a bowl of ice-cold water to cool them down completely. This stops the cooking process, ensuring a wonderfully firm yet tender texture. Once the eggs are thoroughly chilled, carefully peel them. If you find the shells are difficult to remove, try peeling them under cool running water.

Step 3

Now, let’s prepare the aromatics for our marinade. Finely chop the white part of the leek (about 20cm). Mince half an onion. For a touch of heat, finely chop 1 chili pepper, and for a vibrant color, finely chop 1 red chili pepper. Removing the seeds from the chili peppers will prevent the marinade from being overwhelmingly spicy while still offering a pleasant kick.

Step 4

Let’s create the heart of our marinated eggs – the sauce! In a bowl, combine 1 cup (150ml) of soy sauce, 1 cup (150ml) of water, 1/3 cup (50ml) of oligosaccharide (you can adjust this amount based on your preferred sweetness), and 1 tablespoon of vinegar for a pleasant tang.

Step 5

Add all the finely chopped vegetables (leek, onion, chili peppers) to the prepared marinade. Stir everything together thoroughly, allowing the fresh flavors of the vegetables to meld into the sauce.

Step 6

Gently place the peeled, soft-boiled eggs into the marinade. Ensure the eggs are fully submerged in the sauce. Cover the container or wrap it with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
