Don’t you always need a reliable side dish besides kimchi? That’s when this Dubu Jang comes to mind! It’s also known as ‘Mayak Dubu Jang’ (Addictive Tofu Paste) because it’s so irresistibly delicious that you can solve a meal just by mixing it with rice, without any other side dishes. I didn’t know about this kind of banchan before, but I fell head over heels after trying it at a friend’s house! Since then, I’ve been making it consistently. I highly recommend you try making it!

Main Ingredients

  • 1kg firm tofu
  • 1 onion
  • 1 handful chopped green onions
  • 15 cloves garlic
  • 2 Korean green chili peppers (Cheongyang peppers)

Seasoning Ingredients

  • 1/2 cup sugar
  • 1 cup soy sauce
  • 2/3 cup anchovy sauce (fish sauce)
  • 1 cup water
  • 4 Tbsp corn syrup (oligo-dang)
  • Sesame seeds

Cooking Instructions

Step 1

Cut the tofu into bite-sized cubes, about 2-3cm. It’s good to take it out in advance to let some of the water drain.

Place the cut tofu into a wide and deep container. (If possible, use a clean container that has been scalded with hot water beforehand.) Shall we go make the delicious sauce we’ll be pouring in soon?

Finely chop 1 handful of green onions and 1 onion. You can also chop the onion into larger pieces according to your preference. I chopped them small so they’re easy to mix into rice. Slice 15 cloves of garlic thinly, and cut 2 Korean green chili peppers into bite-sized pieces.

In a bowl, combine 1/2 cup sugar, 1 cup soy sauce, 1 cup water, 4 Tbsp corn syrup, and 2/3 cup anchovy sauce. Mix well to create the delicious seasoning. Finally, sprinkle generously with sesame seeds to complete the sauce!

Pour all the prepared seasoning sauce over the tofu in the container. Close the lid and let it marinate in the refrigerator for about a day for an even deeper flavor!

The taste is truly artistic. When serving, spoon a generous amount of Dubu Jang over rice, and top it with a half-fried egg. Mixing it all together is incredibly delicious! This is one of my favorite side dishes, so I highly recommend you try making it!
