How to Make the Perfect Dried Shrimp Stir-fry

Ingredients- 3 cups dried shrimp
- 2 Tbsp cooking oil
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Heat a wok or a deep pan over medium-high heat and add 2 tablespoons of cooking oil. Once the pan is hot, add 3 cups of dried shrimp and stir-fry for about 1-2 minutes until fragrant. This process removes any fishy smell and enhances the nutty aroma of the shrimp.
Step 2
When you start to smell the delicious aroma of the shrimp, immediately turn off the heat. While the pan is still hot, pour in 2 tablespoons of soy sauce. Quickly stir-fry the shrimp to coat them evenly with the soy sauce using the residual heat. This prevents the soy sauce from burning and ensures it infuses the shrimp properly.
Step 3
Now, add 1 tablespoon of sugar and continue to stir-fry until it dissolves and is well combined with the shrimp. The sugar will caramelize slightly, adding a delightful sweetness.

Turn the heat back on to low. Add 1 tablespoon of corn syrup (or rice syrup) as a finishing touch. The syrup will give the stir-fry a beautiful glossy sheen and enhance the sweetness. Stir-fry for another 30 seconds until everything is well incorporated.
Step 5
