This time, we bring you a slightly different recipe using sweet potatoes from Haenam, Jeollanam-do, to boost your immunity and help you overcome the season. Sweet potatoes are rich in various nutrients, making them an excellent ingredient for enhancing your immune system. Let’s create a delicious and healthy meal with our local produce!

Essential Ingredients

  • 1 sweet potato (medium size)
  • 26g green onion (about 1/4 stalk)
  • 1/2 Tbsp anchovy sauce
  • 1/2 Tbsp minced garlic
  • 1 Tbsp coarse gochugaru (Korean chili flakes)
  • 1/2 Tbsp fine gochugaru (Korean chili flakes)
  • 1/2 Tbsp brown sugar
  • 1/2 Tbsp vinegar
  • Pinch of sea salt
  • 1/3 Tbsp sesame seeds
  • 1/2 Tbsp sesame oil
  • 2 bowls of cooked rice

Bibimbap Gochujang Sauce Ingredients

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp water

Cooking Instructions

Step 1

To start making this delicious sweet potato bibimbap, first wash the sweet potato thoroughly, keeping the skin on. Then, use a knife to thinly slice the sweet potato into long julienne strips. Leaving the skin on will provide more nutrients and a better texture.

Place the julienned sweet potato in a bowl of cold water for about 10 minutes to remove excess starch. This step helps reduce stickiness and results in a cleaner, more pleasant texture. Drain the sweet potato well after soaking.

Trim the root end of the green onion, wash it clean, and finely chop it. This will add a nice crispness to your bibimbap.

In a large bowl, combine the drained julienned sweet potato and the chopped green onion. Add the minced garlic, anchovy sauce, sea salt, vinegar, brown sugar, fine gochugaru, and coarse gochugaru. Gently mix everything with your hands until the seasonings are evenly distributed. Be sure to mix thoroughly to coat all the ingredients.

Serve the warm rice into two bowls. Artfully arrange the prepared sweet potato salad on top of the rice. Finally, drizzle with the spicy and sweet bibimbap gochujang sauce (mix 1 Tbsp gochujang with 1 Tbsp water), sprinkle with toasted sesame seeds, and finish with a touch of fragrant sesame oil.
