Cooking Instructions

Step 1

These fresh bamboo shoots were purchased from a traditional market for 5,000 KRW. Let’s start preparing a delicious dish with this seasonal vegetable!

Step 1

Step 2

First, trim off the hard or mushy root end of the bamboo shoots with a knife. This step helps to prepare them for cooking.

Step 2

Step 3

For the bamboo shoots with trimmed ends, make a single slit lengthwise along one side. This makes it much easier to peel off the outer layers.

Step 3

Step 4

Insert your fingers into the slit and gently pull out the soft, tender inner part.

Step 4

Step 5

Here is the soft inner part, extracted from the layers of the outer shell. This tender core is what we will eat.

Step 5

Step 6

Use a vegetable peeler to carefully remove any rough or dirty residue from the surface of the tender inner shoot. Thoroughly cleaning ensures a pleasant texture.

Step 6

Step 7

The outer husks, after the inner parts have been removed, should be finely chopped and disposed of in your regular trash bag.

Step 7

Step 8

These cleaned bamboo shoots cannot be eaten immediately. They need to be boiled and soaked in water to remove their astringent taste. Now, the preparation for a delicious meal is almost complete.

Step 8

Step 9

In a pot large enough to submerge the bamboo shoots, add 2 tablespoons of salt and 2 tablespoons of rice flour, and stir well to dissolve. Rice flour is effective in removing the bitterness from bamboo shoots. If you find it inconvenient to prepare rice water separately, using rice flour directly offers the same benefit conveniently.

Step 9

Step 10

Place the prepared bamboo shoots in the pot with water. Once the water boils, cook on high heat for the first 5 minutes. Then, reduce the heat to low and simmer gently for 30 to 40 minutes. This slow cooking process ensures the bamboo shoots become tender all the way through.

Step 10

Step 11

After simmering for 30-40 minutes, check if the bamboo shoots are cooked by inserting a chopstick. If it goes in smoothly, they are ready. Adjust the cooking time based on the size and freshness of the bamboo shoots. Be careful not to overcook, as they can become mushy.

Step 11

Step 12

Rinse the boiled bamboo shoots thoroughly under running water to remove any debris or remaining skin fragments caught between the layers.

Step 12

Step 13

Soak the washed and boiled bamboo shoots in cold water for half a day to a full day to remove any remaining bitterness. It’s recommended to change the water once or twice during this soaking period.

Step 13

Step 14

Once the bitterness is removed, if the bamboo shoots are long, cut them in half lengthwise and then slice them into thick strips. These prepared bamboo shoots are perfect for stir-fries and seasoned vegetable dishes.

Step 14

Step 15

For bamboo shoots you plan to eat within a few days, store them in an airtight container in the refrigerator. For longer storage, place the cut bamboo shoots in a zip-top bag, add a little water to cover, and freeze. Thaw before use.

Step 15

Step 16
