  • Pork Belly 1kg (whole piece)
  • Doenjang (Korean soybean paste) 2 Tbsp
  • Whole Garlic cloves 5-7
  • Whole Peppercorns 1/2 Tbsp
  • Bay Leaves 3
  • Onion 1/2 (cut into large chunks)
  • Instant Coffee 1 Tbsp

Cooking Instructions

Prepare a whole, thick piece of pork belly, approximately 1kg. Briefly rinse it under running water to remove any surface blood.

In a large pot, add enough water to generously cover the pork belly. Add the doenjang (2 Tbsp), whole garlic cloves (5-7), whole peppercorns (1/2 Tbsp), bay leaves (3), the roughly chopped onion (1/2), and instant coffee (1 Tbsp). Bring the water to a rolling boil over high heat. Once boiling, carefully place the pork belly into the pot.

As soon as the water returns to a vigorous boil, reduce the heat to medium. Set a timer for 40 minutes. Skim off any foam or impurities that rise to the surface during boiling for a cleaner result.

Boil the pork for a total of 40 minutes over medium-high heat. Midway through cooking, flip the piece of pork belly to ensure even cooking on all sides. This will result in a more uniformly delicious suuyk. Keep the lid on, but monitor the water level to prevent it from boiling down too much.

After 40 minutes of boiling, turn off the heat but do not remove the pork immediately. Let it rest in the hot liquid for about 5-10 minutes. This ‘resting’ period allows the juices to redistribute within the meat, making it exceptionally moist and tender. Once slightly cooled, slice the suuyk into your desired thickness.
