When selecting fresh soybeans, it’s best to choose ones that are vibrantly green and not too yellow on the pods. Even if they are slightly more mature, you can still enjoy a delicious snack, so don’t worry!

Freshly harvested edamame are at their most delicious when they have this glossy, green appearance. This is the perfect time to savor the unique fresh flavor of edamame.

Carefully shell the soybeans, separating the beans from the pods. Once shelled, gently rinse the beans under running water to remove any dirt or debris. Be gentle to avoid mashing the beans.

In a pressure cooker, add enough water to cover the beans and cook them, being careful not to let them get mushy. (Adjust the water according to the amount of beans; usually, about 1/3 of the beans should be submerged.) You don’t need to add salt to enjoy the beans’ natural nutty flavor. Using a pressure cooker ensures they cook quickly and become tender. (Pressure cook for about 5-7 minutes, then turn off the heat and let it steam).
