Sauce & Aioli Ingredients- Tomato sauce 100ml (store-bought)
- Mayonnaise 3 Tbsp
- Sugar 1 tsp
- Minced garlic 1 tsp
- Cheese 30g (shredded or thinly sliced, e.g., mozzarella or cheddar)
- Honey 5g (1 tsp)
- Lemon juice 1 tsp
- Diced eggplant (for sautéing, separated from above)
- Tomato sauce 100ml (store-bought)

Cooking Instructions
Step 1
Begin by preparing your cod fillets. Take about 200g of cod and trim any fins or scales. Cut the fillets into thick, steak-like portions. Ensuring a consistent thickness is key for even cooking.

Season the prepared cod. Sprinkle lightly with salt and pepper. Then, add 20ml (2 Tbsp) of olive oil and the fresh rosemary sprig. Gently toss to coat. This marinating process infuses the cod with flavor and helps tenderize it. Let it rest for about 10-15 minutes.
