Ingredients- 10 Zespri Green Kiwis (approx. 700-800g)
- 1 Lemon
- 1 cup Granulated Sugar (approx. 150g)
Cooking Instructions
Step 1
First, peel the 10 Zespri Green Kiwis thoroughly. Then, cut each kiwi in half and carefully remove the white core from the center. Next, finely chop the kiwis. Aim for a texture that is not too smooth, so there’s a slight bite to the jam.

Place the chopped kiwis into a large bowl. Add 1 cup of granulated sugar and stir well until the kiwis and sugar are evenly combined. The sugar will help draw out the moisture from the kiwis, aiding the cooking process. Now, cut the lemon in half and squeeze its juice into the kiwi and sugar mixture, stirring it all together. The lemon’s bright acidity enhances the kiwi flavor and acts as a natural preservative. If you don’t have a fresh lemon, you can use bottled lemon juice, or omit it if preferred.
