Homemade Sweet and Refreshing Ssikye

A sweet and refreshing traditional Ssikye (Korean rice punch) that you can easily make at home. Perfect for a cooling, homemade treat.

Ingredients

  • 3 bowls of freshly cooked warm rice
  • 6 malted barley tea bags for Ssikye
  • 270g granulated sugar (adjust to taste)
  • 18g fresh ginger (thinly sliced)
  • 1 pinch of salt
  • 3.4L water

First, place 3 bowls of freshly cooked, warm rice into your rice cooker. Pour in 3.4 liters of water, then add the 6 malted barley tea bags and 1/2 tablespoon of sugar. Close the rice cooker lid. *Tip: If you prefer a richer, deeper flavor, feel free to add an extra malted barley tea bag for enhanced taste!

Now, select the ‘Keep Warm’ setting on your rice cooker. Let it sit for approximately 6 hours, allowing the rice grains to slowly infuse and convert their starches into sugars with the help of the malted barley. Patience is key here!

After 6 hours, open the rice cooker. You should see some of the rice grains floating, indicating that the enzymatic process has begun. If about 10-15 grains are floating, the fermentation is likely successful. At this point, you can remove the rice cooker pot. (The malted barley tea bags have completed their task, so you can now discard them.)

Carefully pour the fermented Ssikye liquid into a large pot. Add the 270g of granulated sugar to sweeten it, along with the thinly sliced ginger and a pinch of salt. Cover the pot and bring it to a simmer over medium heat. Once it starts to bubble vigorously, reduce the heat to low and continue to simmer for another 10 to 15 minutes. This will create your delicious Ssikye base.

Finally, taste the Ssikye. If you find it’s not sweet enough for your preference, you can add more sugar at this stage to reach your desired level of sweetness. It’s best to let it cool slightly before proceeding.

Once completely cooled, pour the Ssikye into airtight containers and store them in the freezer. This way, you can easily take out a refreshing, sweet, and traditional Ssikye whenever you desire. It makes for a perfect homemade dessert for holidays, special occasions, or simply on a hot day!
