Key Ingredients

  • 1 bag of Jjondgi (choose ones that are slightly thick)
  • 1/2 cup cooking oil (approx. 120ml)
  • 1 packet of instant ramen soup powder (spicy flavor recommended)
  • 1 Tbsp sugar (15ml)
  • 1 Tbsp chili powder (15ml)
  • 1 Tbsp toasted sesame seeds (15ml)

Cooking Instructions

Step 1

To achieve the signature chewy texture of Latiao, it’s crucial to select Jjondgi that isn’t too thin. Unwrap the Jjondgi, gently pull them lengthwise, and then tear them into about 3 equal pieces. Tearing them together with children can make the cooking process even more enjoyable.

Step 1

Step 2

Prepare a deep, microwave-safe bowl. Pour about 1/2 cup of cooking oil into the bowl and microwave it for approximately 4 minutes. The oil will become extremely hot, so always use oven mitts or tongs when handling it. Be especially careful to prevent burns if children are nearby.

Step 2

Step 3

To the hot oil you just took out of the microwave, add 1 tablespoon of chili powder for a spicy kick.

Step 3

Step 4

Add 1 tablespoon of sugar to introduce sweetness.

Step 4

Step 5

Although not pictured, add 1 packet of ramen soup powder for umami and flavor, and 1 tablespoon of toasted sesame seeds for a nutty aroma.

Step 5

Step 6

While the oil is still hot, quickly stir with a spoon to combine all the seasoning ingredients, creating your Latiao sauce. The heat will help to ‘cook’ the spices, releasing their full flavor.

Step 6

Step 7

Place the prepared Jjondgi pieces into a large bowl. Drizzle the finished Latiao sauce evenly over the Jjondgi. Initially, use a spoon to coat the Jjondgi as the oil is still very hot. Once it cools slightly, you can use your hands to toss and mix.

Step 7

Step 8

Put on disposable gloves and gently toss the Jjondgi with the sauce. Ensure that the seasoning is thoroughly absorbed into every piece. Mixing well is key to achieving the best flavor.

Step 8

Step 9

Transfer the completed Latiao to a serving dish. The Jjondgi will release a spicy chili oil, creating a delicious, spicy, salty, and sweet ‘homemade Latiao’! It has an exciting flavor that feels familiar yet new. It tastes like it would be fantastic with a cold beer, but since it feels a bit unhealthy, I might not make it twice. (laughs) However, if you’re craving a unique snack, definitely give this a try!
