Ingredients- 1/2 large onion
- 1 cup olive oil
- 1/2 tsp salt
- 3 Tbsp sugar
- 3 Tbsp 2x concentrated vinegar

Step 1
First, let’s mellow the onion’s pungent flavor. Peel and thoroughly wash half of a large onion. Then, soak it in cold water for about 5 minutes. This step softens the onion’s sharpness, resulting in a smoother, more pleasant dressing flavor. After soaking, drain the onion well and place it in a blender or food processor.

Now, it’s time to add the flavor enhancers. To the blended onion, add 3 tablespoons of sugar, 1/2 teaspoon of salt, and 3 tablespoons of 2x concentrated vinegar. The amount of vinegar can be adjusted to your preference, but using a 2x concentrate means you’ll achieve a nice tanginess with less volume than regular vinegar. Blend everything until smooth.
Step 3
Once the onion and seasonings are blended, transfer this mixture into a clean glass jar or an airtight container. This forms the base of our delicious dressing.

Next, we’ll incorporate the olive oil, which adds richness and body to the dressing. Measure out approximately 1 cup of olive oil (using a standard paper cup as a guide). Extra virgin olive oil is recommended for a more robust flavor profile. Slowly pour the olive oil into the jar with the onion and seasoning mixture.

Securely close the lid of the jar and shake it vigorously. Continue shaking until the olive oil and the onion mixture are well emulsified, creating a smooth, homogenous dressing.
