Homemade Rich Pork Curry
Making Tender and Deep Flavored Pork Curry
I made curry because I was craving it.
Ingredients- 300g pork (cut into bite-sized pieces, shoulder or loin recommended)
- 2 onions (medium-sized)
- 1/2 carrot
- 1 potato (medium-sized)
- A little minced garlic
- A little salt
- A little pepper
- Curry roux or curry powder
Cooking Instructions
Step 1
First, prepare the pork by seasoning it. Place the pork in a bowl and mix with pepper, salt, and minced garlic. This marination process will infuse the meat with deeper flavor. Let it marinate for about 10 minutes.
Step 2
Now, let’s prepare the vegetables. Peel and thoroughly wash the potatoes, carrot, and onions. Dice the potatoes and carrot into roughly 2cm cubes for a pleasant texture. You can also dice the onion similarly or slice it thinly, depending on your preference.
Step 3
It’s time to stir-fry! Heat 2-3 tablespoons of cooking oil in a pot or deep pan over medium heat. Add the diced onions and sauté until they become translucent. Then, add the diced carrots and potatoes and stir-fry together for 2-3 minutes. Finally, add the marinated pork and cook until its surface is browned. Sautéing the ingredients enhances their flavor significantly.
Step 4
Once the pork and vegetables are sufficiently sautéed, pour in enough water to fully cover the ingredients. Generally, about 500ml of water is recommended per 100g of curry roux. Bring it to a boil over high heat, then reduce to medium-low heat. Cover with a lid and simmer for about 10-15 minutes, or until the potatoes and carrots are tender. Skim off any foam or impurities that rise to the surface during cooking for a cleaner curry.
Step 5
When the vegetables are tender, it’s time to add the curry. If you’re using curry roux blocks, add them directly to the pot and dissolve them thoroughly with a spoon or ladle. If using curry powder, it’s best to mix it with a little water to form a paste before adding to prevent lumps. Stir continuously to ensure the curry dissolves smoothly and evenly without clumping.
Step 6
After adding and mixing the curry well, reduce the heat to low and let it simmer for about 5 more minutes. This allows the curry to thicken and the flavors to meld beautifully with the ingredients. Be sure to stir occasionally to prevent it from sticking to the bottom. The delicious aroma of the curry will fill your kitchen!

And there you have it – a delicious pork curry is ready! Serve it generously over a bowl of hot rice for a wonderfully satisfying curry rice experience.
