Main Ingredients

  • 500g pollock fillets (thawed)
  • 1 squid (cleaned and thawed)
  • 100g shrimp (peeled and deveined, thawed)
  • Chopped scallions (to taste)
  • 1/4 onion, finely minced
  • 1/4 carrot, finely minced
  • 1 chili pepper (optional, seeds removed and minced)
  • Pinch of salt (to taste)
  • 2 Tbsp potato starch

Cooking Instructions

Step 1

First, pat the thawed pollock fillets dry. Rinse the cleaned squid and shrimp thoroughly. For the fish cake mixture, use the pollock fillets. Process the squid and shrimp in a food processor or blender until finely ground. Finely mince the vegetables (scallions, onion, carrot, and chili pepper) according to your preference. Add a pinch of salt and 2 tablespoons of potato starch. (Adjust the amount of starch if the vegetables release a lot of moisture.)

Step 1

Step 2

Combine all the prepared ingredients (ground pollock, squid, shrimp, minced vegetables, salt, and potato starch) in a bowl. Knead the mixture with your hands until it becomes cohesive and slightly sticky, ensuring it’s well combined. It’s important to achieve a consistency that isn’t too wet. Once the desired consistency is reached, cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the mixture to firm up, resulting in a chewier and tastier fish cake. (This chilling step is optional.)

Step 2

Step 3

Once chilled, shape the mixture into small, round balls. You can make them bite-sized or into small, flattened rounds, which are easy for everyone to enjoy.

Step 3

Step 4

Alternatively, you can shape the fish cakes into traditional elongated forms. Gently stretch the mixture with your hands to create the desired thickness and shape. Creating various shapes adds to the fun of making them!

Step 4

Step 5

Now it’s time to fry the fish cakes. Pour enough cooking oil into a pot or deep pan, and heat it over medium-low heat. Avoid high heat initially. Once the oil reaches a moderate temperature, carefully drop the shaped fish cakes into the hot oil, one by one.

Step 5

Step 6

The key to perfectly fried fish cakes is controlling the oil temperature! If the oil is too hot, the outside will burn quickly while the inside remains uncooked. If the oil is too cool, the fish cakes will absorb too much oil, becoming greasy and developing excessive bubbles. Fry them gently over medium heat, turning them occasionally, until they are golden brown and cooked through.

Step 6

Step 7

Your delicious homemade pollock fillet fish cakes are ready! They taste wonderful when served hot, or you can let them cool slightly for a delightful snack. Enjoy them with your favorite dipping sauces!
